How do you like your martinis?
Gin or vodka is just the beginning. The vermouth, brine and garnish all help shape what ends up in your glass.
Save this for your next order:
• Gin or vodka: botanical character or a cleaner, more subtle base.
• Dry or wet: less vermouth or more vermouth.
• Dirty: olive brine for a salty, savoury edge.
• The garnish: fragrant citrus oils from a twist, or a savoury olive to enjoy alongside your drink.
And yes—a martini can be both dry and dirty. One describes the vermouth; the other describes the brine.

We bought the art before we had a bar.

On a trip to New Orleans, we wandered into a gallery and discovered the work of Todd White. His paintings were full of people enjoying drinks together—expressive faces, animated conversations and the unmistakable feeling of a good night out.

We could see the atmosphere we wanted for Eau-de-Vie.

There was just one small detail: Eau-de-Vie was still an idea. We had no lease, no venue and nowhere to hang them.

We brought two paintings back to Australia anyway. We were confident we’d find them a home.

White has a wonderful eye for people. Look closely at the hands holding the glasses, the sideways glances and the expressions between friends. There’s a whole conversation happening before anyone says a word.

That personality has been part of Eau-de-Vie from the beginning. Today, his work hangs in both our Sydney and Melbourne bars, and when we opened The Sanderson, he was our artist of choice there too. The two early purchases now hang upstairs at The Sanderson.

Before we had welcomed our first guest, those paintings captured what we hoped our bar would become: a place for great drinks, good company and nights worth getting together for.
