Wh**ky and cheese have more in common than you might expect. Both can be rich, complex and transformed by time and when paired thoughtfully, each can reveal something new in the other.

A creamy cheese might soften a powerful dram. Salty and nutty flavours can draw out unexpected sweetness, while fruit, spice and smoke can take on an entirely different character with the right cheese beside them.

Every Tuesday, we bring together five exceptional whiskies and five carefully matched cheeses for an evening of tasting, comparing and discovering your favourite pairing.

Eau de Vie may be known for its cocktails, but the menu deserves a reputation of its own.

Created by the kitchen behind The Sanderson upstairs, each dish brings the same sense of occasion to the table.

Begin with freshly shucked Sydney rock oysters and an ice-cold Martini. Stay for a few plates, order generously and make an evening of it, or arrive later for dessert and a nightcap.

Some cocktails come and go. The Eau-de-Vie Blazer has been setting our bars alight since the day we opened.

Sweet, strong and gently spiced, it brings together Ron Zacapa 23 rum, wh**ky, Scotch ale and Pedro Ximénez before being set alight and passed between tankards in a spectacular stream of flame.

The performance may command the room, but this drink has never relied on theatre alone. Rich, warming and unmistakably indulgent, it once earned a place among Elite Traveler’s “10 Most Amazing Cocktails in the World.”

Sixteen years and countless menu changes later, the Blazer remains an Eau-de-Vie signature and one of those cocktails every guest should experience at least once.

Made for cold nights. Far too good to save only for winter.

Whenever he returns, the ritual is simple: unlock the cabinet, take a seat and pour. We’ll take care of the glassware, ice and mixers while he settles into the Wh**ky Room with friends, colleagues or clients.

More than a bottle, it’s his own little piece of Eau de Vie and an invitation to return whenever the occasion calls for it.

Look a little closer at the Eau-de-Vie cocktail menu and you’ll find more than a list of drinks.

Behind each flavour-led chapter is a figure who left their mark on cocktail and drinking culture.

Dorothy Parker—the sharp-witted Martini devotee of the Algonquin Round Table.

Constantino Ribalaigua Vert—the Cocktail King who helped perfect and popularise the Daiquiri at Havana’s legendary El Floridita.

Texas Guinan—the larger-than-life queen of New York’s Prohibition-era speakeasies.

Don the Beachcomber—the pioneering bartender who helped create tiki culture.

F. Scott Fitzgerald—the writer who captured the glamour and excess of the Jazz Age.

And Bill McCoy—the rum-runner whose refusal to dilute his liquor became associated with the phrase “the real McCoy.”

Each was chosen for a reason. Together, they allow our menu to pay tribute to some of the people and personalities who helped shape the culture we’re fortunate enough to be part of today.

Their stories bring each chapter to life. The flavour headings—from Bright & Crisp and Tart & Fresh to Decadent & Indulgent and Stirred Down & Straight Up—help you find the chapter that feels most like you.
