Our take on the modern classic Division Bell, reimagined through the lens of the Philippines.

At its heart is Katmon, an overlooked native fruit prized for its crisp, layered acidity. Long used to bring life to Filipino dishes such as sinigang and paksiw, it has remained largely absent from the world of cocktails.

Balanced with Monkey Shoulder Blended Malt Whisky, citrus, agave, and bitters, Katmon lends the drink a vivid brightness and gentle floral character, creating a cocktail that feels both familiar and entirely new.

In Chinese culture, red adzuki beans, sometimes called the “love pea,” have long symbolized affection, yearning, and enduring devotion. Our featured serve, Damn Bean as A Symbol of Longing, borrows that sentiment and turns it into a slightly boozy love letter for the hopelessly thirsty.

Made with Patrón Plata Tequila, adzuki bean distillate, Coffee Luxardo Bitters, apricot, and vanilla, it’s layered with nutty depth, bright stone fruit, and subtle sweetness. Bold and boozy, yet remarkably fresh and easy to drink.

We reimagined the Morning Glory Fizz through one of our favorite greens, moringa, and anchored it with Dewar’s 12 Year Old Blended Scotch Whisky to create our Moringa Glory Fizz.

Moringa’s mild spinach-like bitterness with a slightly nutty, green character finds an easy partner in the Dewars 12 Year Old’s honeyed malt and soft vanilla notes, which almost behave like an oat milk in the drink, bringing the citrus, cream, egg white, and soda into seamless balance.
