Every loud story needs something that holds it together.

Durian is unapologetic. Bold. Divisive. So, to carry something so uncompromising, we needed a foundation built on patience to stand beside it.

For our featured serve, Not Safe for Travel, that role belongs to Zacapa Rum.

Crafted from first-pressed virgin sugar cane, aged above the clouds, shaped through multiple casks, and brought together through Solera blending, Zacapa brings depth, structure, and elegance to an ingredient that refuses to be tamed.

A deserving anchor to one of the world’s most controversial fruits. Because the loudest flavors deserve the strongest backbone.

There’s little else in the food world that brings about as much social turbulence as the Durian: the glorious, stanky king of fruits. A sulfur-heavy structure, layered with volatile compounds that read and smell as something so distinctive, so pervasive, lingering, and borderline wrong - all at once. Loved, banned, and remembered.

But that’s whats makes it ICONIC. A layered composition of sulfur compounds and ripened sugars creates something both rich and confrontational. That persistence defines the drink, Not Safe for Travel.

NOT SAFE FOR TRAVEL

Rich. Funky. Slightly illegal energy.

A cheeky nod to the king of fruits: Durian. Notorious enough to be banned in hotels, trains, and airports across Southeast Asia for its unmistakable aroma.

Made with cacao butter–washed Ron Zacapa 23, Durian distillate, Fino Sherry, salted corn cordial, and a cold lengua de gato foam come together in a serve that’s rich, loud, and impossible to ignore.

Not permitted in transit.
Better consumed in place.

V for Ventura, the sequel to the crowd-pleaser Bendita, is built around an agave spirit we felt should carry this bright serve: Don Julio Blanco Tequila.

Guava leaves bring out a greener side of Don Julio Blanco, with notes of green tea, soft eucalyptus, and peppery bay leaf. It adds a light herbal, tannic structure that gives Don Julio presence while allowing the other ingredients room to show themselves.

It’s a bright agave serve with definition, where each element stands on its own, yet the drink only works as the sum of its parts.

No clear concept.
No deeper meaning.

We can explain the flavor notes. Just can’t explain the name. Heck, we probably spent more time fixing the drink than the story behind it.

Sometimes there is. Sometimes… there really isn’t.

For us, it used to be Bendita. Now, it’s V for Ventura.

Guava leaf sous vide Don Julio Blanco, carrot juice, lime, agave, pickled shish*to peppers, Tultul Salt rim, tiny crisp rocks glass.
Named after nothing. Tastes like everything.

So why V for Ventura?

No idea. But someone suggested “Spicy Guava Tequila Thing 2”, and we just couldn’t live with that.
