Once upon a time it seemed like the Daiquiri was the only thing bartenders would ever drink. 

But this cocktail truly is for everyone and loved by just about anybody that's tried it. 

Some would say that almost all rum classics are based on the Daiquiri, and whilst we don't think that's completely true, it's safe to say that it has inspired an unbelievable amount of tasty bevvies.

1️⃣ The OG: Classic Daiquiri
2️⃣ Underrated alternative: Nuclear Daiquiri (Gregor de Gruyther, LAB bar London, 2005)
3️⃣ Happiness original: Slingshot (Cece, Happiness Forgets 2026)

Rum, lime and sugar. 3 ingredients to make a Daiquiri, but surprisingly easy to mess up. 

Whilst it may all be down to personal preference, one thing that is vital is that you're using the freshest lime juice available to you. 

The Nuclear daiquiri is one of my favourite ways to induce a horrendous hangover the day after. 

Your favourite white rum, cut with Wray and Nephew, Green Chartreuse and falernum, alongside the usual suspects of lime and sugar. 

The slingshot was also inspired in part by the Dry Daiquiri (Kevin Armstrong 2005), and sits on our menu today.

Oolong tea and plum infused El Dorado 3, Campari, lime and sugar. (also goes great served long with tonic)

The Brighter Later has lit up our menu a few times over the past 5 years, brought back popular demand: it remains a favourite amongst our regulars and some of the staff alike.

It brings an unusual and complex flavour to the table, resembling brown rice, or green tea.

Quite hard to describe in simple words really, I suppose then that you'll just have to pop in and try it yourself.

Everyone knows what's in a Whiskey Sour, and most discerning cocktail lovers will have come across a Clover Club before, few however have tried the Compass Club, its bourbon based cousin.

The Book Club is our rendition of this cocktail, incorporating bourbon, white port and cocchi rosa aperitif into a stunning, silky smooth experience that sits comfortably in the middle of the 2 previously mentioned cocktails.

2 very good reasons to visit Happiness Forgets today, one other reason is because its a wonderful day to try the Free Bird.

There really is never an inappropriate time for a Free Bird cocktail.

Those of you that have been visiting Happiness Forgets for a while, will know that we have a soft spot for mixing sherries and vermouth, but the results are always delicious.

3 wonderful Manhattan twists, all named after 3 incredible places.

The Brooklyn is one of the most requested Manhattan variants we make at Happiness, but the Toronto is one we suggest on a very regular basis, so much so that it inspired us to create the Taiwanto.

The Brooklyn is one of the very famous Manhattan variants that carries the name of one of New Yorks boroughs.
Featuring Amer Picon, Maraschino, dry vermouth and rye, this one goes out to all those people that like their Manhattans a little on the drier side.

(Try a Bushwick if you like them sweet!)

The Toronto was a drink that was mostly forgotten to time, after being invented in the 1920's and originally referred to as "The Fernet Cocktail", this drink has made a resurgence and is now fairly well known amongst classic lovers.

Even Fernet Branca avoiders will likely still enjoy this one, as there is plenty of sweetness involved to mellow the bitterness, whilst still letting those herbaceous notes fly.

Taiwanto is a nod to the Toronto, with ingredients sourced from Taiwan. Wintermelon or, more commonly referred to as "wax gourd" (sounds awful) in the west, is a large vine-grown fruit used as a vegetable in Asian cuisines.

Combined into a single ingredient using Chrysanthemum flowers and a little brown sugar, we finalised our Toronto twist and named it so to make our inspiration known.

The drink was also put together by our very own Cece (miss you girl) who is now back home in Taiwan, so come try this drink if you're missing her as much as we are.

Last week the Counterpart hit our menu and has been going down a treat. There aren't enough Tequila drinks in the world, so we are very happy to welcome this one to our ever-changing list.

We are so back!

It has been a while since our last "If you like a" carousel, but we're back with some wonderful bevvies for you.

Featuring one legendary classic, one lesser known banger and then one Happiness Forgets original.

1️⃣ The OG: Jungle Bird - 1973 Jeffrey Ong
2️⃣ Underrated alternative: Scorpion - 1950's Victor Bergeron
3️⃣ Happiness original: La Catrina - Chelsie Bailey

The Jungle Bird is one of the most well known Tiki-style cocktails, although polarising to some due to its combination of bitter liqueur with rum and sweet juice. Created at the Kuala Lumpur Hilton hotel in 1973, this drink still holds up today.

The Scorpion is far less well known, but just as wonderful. Dating back to some time in the 1950's, this Mai-Tai esque drink combines a fruity body with a strong bite, featuring both rum and cognac.

Two Barrels remains one of the most popular drinks we make from an old menu that just keeps getting requested, even years after we've taken it out of rotation. The drink walks and talks like a Negroni, but more closely resembles the bitter style of the Jungle Bird.

It's not too late to try our range of special Paloma cocktails on our menu until the end of the month!

We have been enjoying this wonderful classic in bars all across London, and you should too!

mixed with grapefruit soda is the match made in heaven for the perfect paloma and our special Spiced Cherry Paloma.

It's Paloma month!
If you haven't been down to Happiness Forgets yet this month, you should know that we are currently offering 3 drinks at a special price for the month of May.

Alongside the classic Paloma (obviously) we are also offering a non-alc version for all those sensible folk out there, and as pictured, our twist: The Spiced Cherry Paloma. Chilli infused Ocho Tequila , cherry and Campari alongside citrus and the wonderful Three Cents pink grapefruit soda .

We really think the Paloma is the perfect summer time drink and we're looking forward to sharing some with you over May.
