This month we’re highlighting the harmony between three sake and seafood pairings and dishes, starting with Pizza Fritta, Cod’s Roe & Fermented Chilli paired with Yauemon "Moonlight" Junmai Nigorizake
Moonlight, or 'Tsuki Akari' in Japanese is called so because of it's moonlight hue - it's pale and creamy. It is a well-balanced sake with a refreshing acidity and a matly sweetness which compliments the flavours of the cod’s roe and fermented chilli.
