Tokyo Bird is a Japanese inspired small bar located in Belmore Lane, Surry Hills, serving beers, whisky, cocktails and yakitori – chicken and other delicious morsels on skewers, cooked over charcoal Japanese style. Headed by general manager Jason Ang and bar manager Yoshi Onishi, Tokyo Bird aims to combine the best of Tokyo’s yakitori-ya and classic cocktail bars in an intimate Surry Hills laneway venue.

Lola Merly, his entry for this year's Suntory Cup, is named after his grandmother. Built on the flavour of Filipino Tocino and everything that memory carries with it.

Jarmaine grew up eating Tocino- the sweet, savoury, sticky kind his family made at home. For this year's Suntory Cup, he wanted to put that on a coaster.

Lola Merly is his answer. Maker's Mark 46 as the base. Garlic for the savouriness. Brown sugar for the warmth. Apple to tie it all together. An Old Fashioned that quietly carries a whole lot of meaning.
