The Melbourne Walking Whisky Circuit takes you through three very different bars, with a whisky passport guiding the way.

Begin at Pearl Diver with an oyster, a premium Chivas Regal pour and The Clipper. Continue to Nick & Nora’s for another whisky, paired bite and bespoke cocktail. Then finish behind the hidden door at Eau-de-Vie with the Deerstalker, Chivas Regal Crystalgold and artisan cheese.

Three venues. Three cocktails. Three premium whisky pours. Plenty to discover along the way.

Take the self-guided circuit at your own pace. Perfect for date nights, after-work adventures and catch-ups with the whisky-curious. Or gather a group of 8–15 and add a host for behind-the-scenes stories, Melbourne bar history and a little expert whisky guidance.

Available Tuesday to Thursday from $120 per person.

That cloud rolling across the bar?

It isn’t smoke. It’s liquid nitrogen one of the techniques we use to bring a little theatre to the Eau-de-Vie experience.

At -196°C, liquid nitrogen allows us to rapidly chill cocktails, frost glassware, create dramatic vapour, and add texture and aroma in ways traditional cocktail techniques simply can’t.

Liquid nitrogen isn’t an ingredient in your drink. It evaporates before the cocktail is served, leaving behind the chill, the theatre and the moment.

Because at Eau-de-Vie, cocktails don’t just taste great…

They make an entrance as well.

The Don Giovanni brings together Grey Goose vodka, Cocchi Rosa, Amaro Montenegro and our house-made citrus peel cordial all carbonated in-house for a crisp, Champagne-like effervescence.

Citrus and floral notes arrive first, followed by the distinctly Italian bittersweet finish of Amaro Montenegro.

And because this is Eau-de-Vie, it’s presented in our duck decanter and poured Champagne-style at your table.
