DIASPORA CLUB šŸŒ“ For this, we make a smoked banana leaf water for a subtle smoky green tea-like note as our dilution. First we smoke the leaves by creating a hot box out of hotel pans and plastic wrap. Then we steep the smoked leaves into hot water just like a tea. After straining, we add it to our batch along with rhum agricole, a bajan rum macerated with coconut, pandan liqueur, calamansi citrus acid solution, and salted honey. This mixture chills overnight, and gets all charged up with CO2. Garnished with a banana leaf and poured from the draft: our tropical, bright carbonated cocktail.ā
