We call Chef Taylor Best our “CDB”—Chef de Burger.

Taylor says he’s just “the pasta guy that also does burgers.”

He’s been holding down the flat-top for the last year.

According to Taylor, the secret is “the magic sauce.” Equal parts “fancy ketchup and good mayo.” He’s also very clear the ketchup cannot be “normal table ketchup.”

Start with quality meat. Salt both sides. Grill the bun. One slice of American cheese.

And how many pickles? Three. “Because that’s how many fit on the bun. Also, it’s lucky.”

Taylor says his favorite part of being CDB comes at the end of a long shift—after getting their asses kicked—cooking one last burger, cutting it into fours, and passing it around the line.

Thai Kaa — Hendrick's Gin, lacto guava, thai basil, shio koji.

This vibrant green beauty didn’t always start out green.

A lot of our cocktails these days begin with one core ingredient, and this time around it was guava. We fermented it with a few fun-zymes (lacto plantarum), and were genuinely surprised by how vibrant, floral, and expressive the fruit became in the process.

From there, every remaining ingredient was chosen either to complement the guava’s bright tropical character or to contrast.

It’s curtains for our Winter menu. This weekend is your last chance to experience it before we turn the page to Spring/Summer.

We’re really proud of this menu. We explored a lot of challenging—but ultimately delicious—ideas along the way. Some highlights included cocktails inspired by chanterelle ice cream, the pairing of kombu and passionfruit, brûléed persimmons, and a nod to Jeni's Splendid Ice Creams Bay Leaf Cheesecake ice cream (yes, another ice cream).

We’re excited for what’s next—even more boldness and bigger flavors coming with the new menu.
