Meet Guillermo.

Although he may need a moment to answer the question, “Where are you from?”, Guillermo can confidently say that Chicago is home after years spent traveling and working across the country.

As Beverage Director for Ever and After, Guillermo leads the beverage teams with a collaborative approach, believing that the best programs are built by strong teams working toward a shared vision.

When asked what keeps him going through the long days, his answer is simple: seeing his team learn, suceeed and celebrate their wins.

Outside of work, Guillermo is tolerated by his two dogs, Blixa & Eno, and his wife who is, by any reasonable measure, significantly cooler, smarter, and definitely funnier than he is.

Diana is our in-house tarot reader and one of the calmest, most focused people behind the bar.

She’s serious about the details, works incredibly hard, and has a knack for noticing when something isn’t exactly where it should be. The rest of us spend a fair amount of time trying to break that focus and get a laugh out of her. It doesn’t always work, which only makes it better when it does.

That same attention carries into her cocktails. Diana often looks to her own experiences for inspiration, so when she has a hand in a drink, there’s usually something personal behind it and a good chance you’ll learn something new while you’re drinking it.

Thoughtful, talented, endlessly detail-oriented, and much funnier than she lets on. She might read your cards, but good luck reading Diana.

Juan. The Argentine music box.

Juan has his own rhythm. From the second he gets in, he moves through the day with this steady, growing intensity — prepping, barbacking, jumping between tasks, always trying to get a little better at what he does.

You’ll probably hear him before you see him: humming, singing, making some kind of sound while he fast-walks through the building. At this point, it’s become part of the day. A pretty good sign that Juan is locked in and the bar team is covered.

He’s funny, focused, hardworking, and very much Juan.

Brandon, the mullet from the Quarter.

Years spent behind bars in New Orleans gave Brandon a deep appreciation for hospitality and an endless curiosity for the craft. If there’s a bar worth checking out, a technique worth exploring, or an R&D rabbit hole worth disappearing down, chances are Brandon has already gotten there first.

He can absolutely be a curmudgeon, but behind the occasional grumbling is someone who cares deeply about the craft, the team, and doing things the right way.

A lot of what After is today has Brandon’s fingerprints on it, and we’re all better for it.
