Kind of as you know it, but kind of not as you know it…
We’ve always been proud of our alcohol free serves at SiC. So often they can be a secondary thought - but we care a lot about being able to provide points of difference with our alcohol free drinks here.
Take our Chinotto for example, a staple serve for us for a few years now. We save our citrus husks when we juice so we can build the base of this drink. The predominant citrus used is orange, to keep it true to its unique flavour… When we have our leftover husks, we blacken them in an oven with other citrus husks, cassia, juniper, pink peppercorn and bay leaf.
Once the citrus husks have caramelised in the oven, we remove, cool down and then rest - completely submerged, in a 1:1 sugar syrup for 1 month (4 weeks) for the citrus to break down and infuse into the liquid it’s submerged in.
The result is a bitter, citrus led and slightly botanical sweetener that we rebalance with some citric acid, then lengthen, add Amaro Lucano Zero for another bittersweet push and then force carbonate in house.
Often, alcohol free drinks can be trickier to structure in the absence of ethanol. Not in this case… Our Chinotto is incredible in body, taste and texture.
