We had the absolute pleasure of hosting and from .cottage - one of the best to do it, for a seminar & guest shift on Thursday.

From start to finish, true professionals & unreal to work with!

• Dojo - With Oli Baddeley •

The House of Suntory - Dojo, is a program that introduces bartenders to authentic Japanese hospitality, and challenges them to create drinks through the lens of Japanese principles in a competition format.

Oli has 3 drinks live in the venue right now, with a focus on seasonality, Japanese craftsmanship & hospitality.

In being involved, we’ve used sources to forage ingredients, work with local ceramicists (shouts again to Frida Cooper) and give focus to interactive serves throughout.

Sic is almost 8 years old… This has grown to something bigger than I ever could have imagined.

A stable presence in our city - and hopefully we add value to our hospitality scene and the cocktail culture within the city.

I owe everything to the team of people who helped carry this vision forward, gave their time and efforts to the drive for higher standards, to keep improving and to maintain our stance on originality.

Nothing can be achieved alone. In SiC we push for a collective effort to contribute to the success of this bar, and it shows through the drive and ambition the team of people around me has…

We’ll continue to push forward, grow the cocktail culture in Manchester, and drive continuously towards the higher standards…

SiC x Caretakers Cottage

What a treat we have for y’all…

Matthew Stirling (Co owner) & Eddie Goddard (Venue Manager) will be joining us for our biggest event of the year… We’re welcoming Melbourne’s own - Caretaker’s Cottage for an industry seminar, followed by a guest shift in the evening.

Not only known for their incredible hospitality, drinks and venue, this bar is littered with accolades for good reason. From Best New International Cocktail Bar at Tales of the Cocktail, to the Art of Hospitality Award, Best Bar In Australasia & ranked Number 19 in the world’s The World’s 50 Best Bars.

At 2pm on the day, they will be running an industry seminar named ‘Fix the roof while the sun is shining’- All you gotta do is slide into our DMs to book onto that.

We got some more little bits added to the day to make it a little more special - just note that all reservations for SiC will be seated in the Studio between 5 and 9pm.

Reservations are reccommended, walk ins are on a first availability basis..

Y’all said Vanilla and Oregano can’t work - but what do we keep saying here? We don’t experiment, we move with purpose…

Coconut oil bridges Cedarwood & vanilla, lactic acid in the salted vanilla giving a boost to the creamy mouthfeel, and then cedarwood bridges the Oregano, rum & vanilla with a dry, resinous ‘forest’ like depth…

This one has often raised eyebrows at the pairing of the two, but we’ve always made sure we remove any guess work. We don’t deveop drinks with a ‘I think this might work’ mentality - we make drinks with pairings that we ‘know’ work, through time, research & development.

This cocktail is a perfect example of showcasing diverse ingredients that build bridges to one another, and how microdosing adds layers of depth to a drink. For example, our cedarwood distillate is just 2 drops per drink as it’s super aromatic & woody, but provides enough support to oregano. Oregano shares chemical compounds (terpenes) to wood. So cedarwood pulls that ‘pizza’ vibe you get from Oregano to more of a floral, botanical note.

Introducing: This is Harry, and He loves Cardamom… Just thought it was important to get that out of the way as he said he felt it was a priority to let you know…

A bit about him… No one knows where he’s from, he’s a total free spirit. Pretty much always wears sandals (no socks), as he loves to let the dogs breathe! We believe he’s from a village near oxford, population of 12 people, but his non descript accent kinda hides it. It’s a complex mix of UK, South African, New Zealand & Canadian. Having spent a lot of time outside of the UK, it’s easy to see why… As an adopted New Zealander, he loves ruby. Hates sideways hugs… Hugs must be front on, but be careful as his body temperature is crazy hot so get in and out.

A true ‘islander’ living and bartending in the UK - his home is a bartender’s dream. Ferments on the go, freezer full of batched Martinis. During his travelling adventures, he’s worked with our good pals at M O T H E R Cocktail Bar in Toronto, where they specialise in many things, and one of them being fermentation. Harry will just up and jump on a plane to spend 24 hours in another city just to visit another bar (24 hours in oslo to visit HIMKOK ). Also having a particular interest in distillation, having spent some time doing some distillery work, jumped on a plane to Barbados to visit a distillery too…

New to the city, one of his ‘home away from home’ joints is Chakalaka - Manchester’s only South African bar & kitchen - expect this and only this if you ask him for a recommendation.
Harry brings serious bartender ambition, with a touch of chill & free spirit.

Do we have a ‘service style’? Of course we do…

8 years ago, fully table service cocktail bars in Manchester were few and far between, if any. We chose this route so that we could maximise our time, connecting with people on a human level. We value conversation & sharing that time together.

You’ll be greeted at the door, taken to a table or one of our bar seats - we’ll always give you water, and give you a quick insight into who we are - purely to give some navigation through our menu.

Service calls are a big thing in hospitality - if you overhear our host say ‘101 or 102’ to another colleague once you’re seated, it’s relaying info that explains to our team if you’re a first time visitor or repeat visit. 101 - first time, 102 - been before.

This helps us gauge what sort of intro to give you - a more insightful walk through of our menu, focus points (carbonation, fermentation & distillation), or just a gentle reminder that a big part of what we do is home made ingredients, giving full autonomy on flavour profile of drinks, and that we’re here for any questions you have.

Small groups & table service, allows people in the venue to get the best of us. It sets a warming and approachable tone in the room - we often get pushback from our no large groups ethos but we’re cool with that, we won’t change that (y‘all got Double Down now).

Ultimately, we’ve taken a ‘design’ approach to our service style over time so that as above - we connect with people on a human level, remove the ‘stuffiness’ from our space that can be associated with cocktail bars, and have everyone in the team play multifaceted roles, full hands on with our product so that all questions & conversation can be had at the table.

Listen up, we figured we’d drop this news a day early - partly because it’s shaping up to be an incredible day for Manchesters Bars…

We’re super excited to welcome Melbourne’s own - Caretaker’s Cottage for an industry seminar, followed by a guest shift in the evening.

Not only known for their incredible hospitality, drinks and venue, this bar is littered with accolades for good reason. We’ll be joined by venue manager Matt & Bartender Eddie for a one of a kind evening from one of the best to do it…

Reservations will go live on Friday 7th August at 12pm. For spots on the industry seminar, usual drop us a DM and we’ll get you booked in. Reservations will likely be popping off so y’all can use Double Down as a place to hang if spaces are limited
