Project Halcyon has poured its last cocktail.

It was with sincere regret that due to unexpected challenges at the ownership level we must close our doors for the foreseeable.

Though we say goodbye, the memories live on.

Thank you to everyone who shared in our craft, our community, and our story.

"See You Next Year..."

2025 has definitely had it's share of challenges. From relaunching the bar back in May, introducing live Music and curating our well-received Metamorphosis Menu; we can't wait to see what 2026 brings.

For now, it's time rest our weary heads and spend some time with loved ones. From today we'll be closed until 7th January.

Keep you eyes peeled as we start to reveal some of what we've got in store for 2026.

"Wabi Sabi" - from the Japanese philosophy of embracing the imperfect.

- Wasabi & White Chocolate Cream Liqueur*
- Coconut Matcha Foam

In this rich number we blend Roku Gin with a house made cream liqueur, topped with a loose coconut matcha foam served over an imperfect block of ice.

The result is a decadent sipper that pairs vegetal spice with bright citrus and creamy white chocolate.

Wasabi & White Chocolate Cream Liqueur*
- Sousvide fresh English wasabi with Kaffir lime leaves, neutral grain spirit, melted cacao butter and white chocolate. Filter and blend with cream liqueur base.

We’ll be opening our doors a bit later – so when the sun goes down, we’ll be ready to serve up your favourite cocktails in our cool little basement hideaway.

Make a splash this bank holiday.

Make a splash with a cocktail that’s as bold as its namesake, enter The Hemingway Daiquiri.

Originally crafted for Ernest Hemingway at Havana’s El Floridita, this twist on the classic daiquiri was made to suit the writer’s taste: no sugar, double the rum. Bartender Constantino Ribalaigua Vert refined the mix with grapefruit juice and Maraschino liqueur, creating a tart, refreshing icon with a legacy as lasting as Papa himself.
