✨ITS TIME✨ Our long awaited dry aging program kicks off today with beautiful NY Strips!! What is dry aging you ask? Dry aging is a process by which a premium cut of beef is kept in an open-air, controlled environment (in this case our professional dry aging cabinet) and aged for several weeks. As natural enzymes break down muscle fibers, and as moisture evaporates, the natural beef flavor concentrates and the muscles tenderize. The result is an especially flavorful and tender cut of beef that will leave you asking for more. We have aged our cuts for 21-24 days and the effort has been most impressive!!
