After seeing the most of the production side, we moved on to see the Nursery where they take very good care of the baby Yeasts that they use in the different Rums they make at the facility and then on to tour the warehouse where the barrels live. Due to the volatility of this much high proof rum in one area, the electricity is kept to a minimum, so we wandered through a dark labyrinth of barrels by the light of our tour guides flashlight and tried some nice juice straight from the barrel.

Drink Cut & Dry, their Coconut Rum. 1 Coconuts worth of oils to produce one bottle of rum, it's simply delicious and not sweet at all like some other brands on the market. (Over 200,000 Coconut trees were planted on Barbados to supply Planteray with Coconuts for this expression, as well as to supply the island with fresh air & coconuts! In under 2 years!)

Stades has a Cask out facing the sea where the barrel can absorb the salty sea air to impart a little taste of the Atlantic into one of their Rums (in the best way possible). This cask is a Solera, meaning the cask is never emptied, any barreling they do of the juice in this case is then topped up with newer juice to keep the flavor rolling (like a perpetual stew, but Rum!)

After the tour, we enjoyed some colorful cocktails and delicious fare on the beach as well as a dip in the ocean.

We started out at the Stades distillery gift shop (Stade's is an age old rum distillery, founded in 1893 & still producing quality rum for the island of Barbados, where Planteray Barbados does its production) where we were introduced to some of the distillery staff and prepared for a tour complete with hard hats.

Started out, as one does, with the cooking tanks where Molasses and water are cooked into a sort of mash (for all you brewers out there) and moved into fermentation vats where they are introduced to proprietary yeasts and turned into a sort of sugar cane "beer" before they enter the Stills and are evaporated into proper Rum.

The Copper Pot Still pictured "The Rockley" is the oldest working Pot Still in the world, you can see from the close up picture that it was riveted by hand. It was built in 1790 and is currently still in operation at the distillery.

We were able to, at this point, smell the different products from each of the 3 different stills to get an idea of how different a nose can come from just the different ways of evaporating the same juice.
