Chloe Siok created Stage Name inspired by the Pornstar Martini. She appreciated the flavor harmony but wanted something cleaner and more balanced. Her approach: clarify the passionfruit to eliminate the heavy texture, omit citrus altogether, lengthen the drink with dry manzanilla sherry, add Licor 43 for vanilla notes, and serve alongside some passion fruit caviar. The name is deliberate—this isn’t a remake, it’s a new interpretation drawn from the same flavors.⁠

Lindsay comes from interesting stock—descended from a Revolutionary Midnight Rider, a vice president, and a suffragette. She started bartending at 20 in Jacksonville, then did what curious people do: left for Spain to teach English and drink vermouth by the sea. (Please note: she makes a mean Paella Valenciana.) Lindsay is incredibly kind, with a natural knack for hospitality that can’t be taught. She loves vintage amaros, french fries, and all-you-can-eat sushi. Like her ancestors, she doesn’t follow the laid-out path—she makes her own. We’re lucky her journey brought her to PDT.⁠

Meet Claudia. The Colombiana, who came to us by way of Puerto Rico—La Isla del Encanto. That island magic followed her to New York. You notice it immediately: the way she engages with guests, the energy she brings to the bar, that smile that changes the room. ⁠
