Meet Gavyn, bringing a fine dining background behind the bar and a love for experimenting with flavours that are a little outside the ordinary.

When he’s not mixing up his favourite Mountain Flower, you’ll probably find him talking fashion and his love for European labels like Acne Studios and AMI Paris. He’s also the man behind Gavyn’s Bijou, his take on a slightly forgotten Prohibition-era classic, brought back to life the Bardeaux way.

Meet Lucas, our Venue Manager at Bardeaux.

Hailing from France’s legendary Chartreuse region (yes, that Chartreuse), it feels only fitting that his favourite cocktail is a Last Word, with a rye Old Fashioned coming in a close second. Queenstown has treated him pretty well too, it’s where he met his English fiancée and found a little romance on the other side of the world.

Behind the cocktails, Lucas has a serious sweet tooth and will never say no to a good slice of cake. And his signature look? A trusty pair of red socks. 🍸
