Sunday Request: NAKED & FAMOUS

Equal parts mezcal, Yellow Chartreuse, Aperol and lime. Smoke, bitter orange, herbal sweetness and sharp citrus, all pulling against each other and somehow landing perfectly balanced.

It had a spell on our menu a while back, and enough of you kept asking that it never really left. No Monday to worry about tomorrow either, bank holiday, so tonight can run as long as you like. Ask the bar and it's yours.

🍸 Beyond the Menu: LONDON CALLING

Gin and Tio Pepe fino sherry, shaken with lemon, sugar and orange bitters. Dry, saline and sharpened with citrus — restrained, but it holds your attention right to the last sip.

Never made the menu. Never left the bar either. Midweek's the right time for something quieter — put in a word and it'll be in front of you.

Beyond the Menu: PENDENNIS & GRASSHOPPER

Neither of these is on the menu. Both get made anyway. Pendennis leads with gin, sweet vermouth, lemon and cherry brandy — bright, tart, a little floral. Behind it, the Grasshopper: crème de menthe, crème de cacao and cream, cool and rich as dessert.

Our bartenders go well past what's printed. If there's a drink you've had in mind all week, name it at the bar and it's yours.

🌿 Off the Menu: INDUSTRY SOUR

Fernet-Branca and Green Chartreuse shaken with fresh lime and sugar, then finished with a fine aromatic mist. Herbal, bitter and citrus-sharp — a proper wake-up for the palate.

The heatwaves have finally broken and London's settling into a fresher breeze, with a bit of rain hopefully still to come. Cooler evenings suit this one perfectly — bracing rather than cooling. You won't find it on the menu, but ask the bar and it's yours.

🌿 Off the Menu: SLICED GAMBINO

Appleton Estate Jamaican rum with Amaro Montenegro, spiced falernum and a fistful of fresh mint. Warm rum funk, bittersweet herbs, then that cold green lift right at the end.

You won't find it on the menu these days, but our bartenders still build it on request. Late-summer Sunday, over ice, no rush.

🌘 Pre-Dinner Choice: PALOMA

Tequila, grapefruit and lime over ice, topped with pink grapefruit soda. Tart, salty-sweet and thoroughly cold — heatwave insurance in a tall glass.

London's partial eclipse runs 6:17pm to 8:06pm this evening, peaking at 7:13pm with around 91% of the sun covered — the deepest we've had since 1999. Get here before 7pm and your Paloma's £9, then step outside for the main event. (Eclipse glasses on, please — it never gets fully dark.)

🍊 Sunday Pre-Dinner: AMERICANO

Campari, vermouth and soda over ice, orange wedge on top. Bittersweet, long and properly cold — the one that arrives at your hand and disappears far too quickly.

Fifth heatwave of the summer landed today, and the week ahead's climbing higher still. £9 pre-dinner cocktails, Sun–Thu from opening till 7pm — get in early and let it do the work.

🥃 Tonight's Pour: GLENDRONACH ORIGINAL 12

A Highland single malt matured in Oloroso and Pedro Ximénez sherry casks — deep, dried-fruit richness with a warm spiced finish. Sipped neat by candlelight, exactly as it should be.

One of the hundreds of whiskies on our shelves — enjoy it on its own, or build it into a flight and explore a few.

🥃 Sunday Sipping: RUM OLD FASHIONED

El Dorado 12 Year Demerara rum, demerara sugar and aromatic bitters, finished with an orange twist. Deep, warming and unhurried — the Old Fashioned, rebuilt around aged rum.

Made to be nursed slowly. Just the thing for a quiet Sunday at the bar.

🌵 Bartender's Choice: COCUY TOMMY'S

Meet cocuy — a rare Venezuelan agave spirit, wilder and less tamed than its tequila cousins. We've poured Verdor Reposado into a Tommy's Margarita with nothing but agave and fresh lime. Bright, clean, properly moreish.

Midweek's the perfect excuse to try something off the beaten track.
