Nobody walks into a cocktail bar for the w**e list. Fair enough — but there's a proper one here, and it's not the usual two whites and a red.

Picpoul de Pinet from £7 a glass. A Calcarius orange from Puglia, by the litre. A Spanish Monastrell served chilled. And if the evening calls for it, there's Bollinger and Ruinart waiting too.

October, dark by six. Not everything needs shaking.

🍊 Midweek Pour: YELLOW CHARTREUSE

130 herbs and plants, a recipe the Carthusian monks have kept to themselves since 1737. Honeyed, herbal and warming, served cold in a frosted coupe with orange oil sprayed across the top.

Nothing else on the back bar tastes like it. Wednesday's a fine night to find that out.

Spirit, sugar, bitters, ice, and an orange twist expressed over the top — that fine spray of citrus oil is the whole finish. Five ingredients, no hiding place, and the reason it's outlasted everything else.
