Shelter is excited to welcome Chef Francis Martinez Francis Martinez to Shelter as our new resident chef, bringing his concept Dialogue Dialogue to the kitchen.

Chef Francis has a knack for taking flavours that don’t necessarily belong in the same conversation and making them click. His Filipino background runs through the menu, with influences picked up from Japan, Peru, and global hot spots. It’s tapas with enough character and story to hold its own next to what’s coming out of the bar’s cocktail program, and so far the match up has been landing well.

We’re looking forward to having Chef Francis and Dialogue working with us, experimenting with new dishes, and seeing where the collobartion goes. Come by, grab a drink, and see what he’s cooking.

After more than four years leading Shelter, our Bar Manager, Ryan Ryan is heading to Vancouver to begin the next chapter of his life.

Four years behind a bar like Shelter is no small thing. Ryan has been here through hundreds of services, countless menu changes, late nights, cocktail experiments, very long prep days, and all the less glamorous work that goes into making a bar feel effortless when the doors open.

Alongside an incredible team, he helped guide Shelter through some of its biggest milestones, including our introduction to North America’s 50 Best Bars The 50 Best Bars extended list and Canada’s 100 Best Canada's 100 Best Restaurants list. He’s had a hand in countless drinks, helped develop an exceptionally talented bar team, and put a tremendous amount of care into pushing Shelter forward year after year.

We’re incredibly proud of what Ryan and the team have accomplished, grateful for everything he’s given this place, and excited to see where Vancouver takes him next — but first, there are still a few drinks to make: Ryan has one more week at Shelter. If you’ve enjoyed one of his cocktails, spent an evening at the wood with him, or simply want to wish him well, come by, grab a seat and have one last celebratory drink together. Come raise a glass to Ryan and send him off properly. 🥃

SHELTER 75. Our house riff on the French 75. A classic that didn’t need fixing, just a little time with our team.

Dillon’s Dry Gin 7 and Blue Delta bring the botanicals, fresh lemon keeps things sharp, and Fiol Prosecco takes care of the bubbles. Floral, bright, dry and exceptionally easy drinking. Nothing overworked. Nothing hiding behind twelve ingredients. Just a very good sparkling cocktail, built the way we like it.

Shelter 2.0, almost. After a month behind closed doors, we’re softly reopening tonight with a new interior, a refreshed space, and the same commitment to making very good drinks in a very dark room.

There are still a few finishing touches to come over the next month or two, but we’ve missed having people in here and decided it was time to open the doors. Come by tonight for the first look at the next chapter of Shelter. We’re back.

PECAN & AGAVE takes its cues from Glorias, the caramelized goat’s milk candies of Monterrey, Mexico. Rich pecan, warm vanilla, Darjeeling tea, and mole bitters wrap around a base of Patrón Reposado, Bacardí Spiced Rum, and Chica Chida for something comforting without ever becoming sweet.
