From August 16–29, Shelter will be taking a short break for a little facelift. Think less reinvention, more well-earned polish.

PECAN & AGAVE takes its cues from Glorias, the caramelized goat’s milk candies of Monterrey, Mexico. Rich pecan, warm vanilla, Darjeeling tea, and mole bitters wrap around a base of Patrón Reposado, Bacardí Spiced Rum, and Chica Chida for something comforting without ever becoming sweet.

Nine years feels both impossibly long and like it happened yesterday. Thank you to everyone who came by to celebrate with us last night!

A heartfelt thank you to every person who’s been part of Shelter over the years. Past and present, you’ve poured far more than drinks into this place. You’ve built a culture, a community, and a bar we’re incredibly proud of.

And thank you to everyone who’s chosen to spend an evening with us over the last nine years. We never take it for granted.

Nine years ago, we unlocked the doors and hoped a few people might wander in.

Somehow, you’re all still here.

Join us on Sunday, July 27 as we celebrate Shelter turning 9.

We’ll be bringing back a handful of favourites with a limited-run menu, pouring drinks at 2017 prices, offering 25% off all bottled cocktails, and welcoming our friends from The Chickadee Room for a guest pop-up behind the bar.

Mostly though, it’s an excuse to spend an evening with the people who have made Shelter what it is over the last nine years.

Come raise a glass, tell a story, order something you’ve never tried before, and help us celebrate another year of curiosity, cocktails, and controlled chaos.

We prefer substance over spectacle. Behind every cocktail is weeks of testing, refining, tasting, and questioning. The goal isn’t to surprise with theatrics, it’s to make something you’ll still be thinking about long after the last sip.

No smoke for the sake of smoke. No gimmicks. No chasing whatever happens to be trending this week. Just thoughtful drinks, built from months of research, careful technique, and a quiet obsession with getting every detail right.

The lights stay low. The music stays just loud enough. We let the cocktails do the talking.

Once a month, we pull back the curtain and invite a small group behind the bar to explore the techniques, ingredients and stories that shape the drinks we make. No more than nine guests. Plenty of hands-on time. No experience required.

Come with friends, bring a date, or simply spend an evening learning something new with a drink in hand. Seats tend to disappear quickly, so booking ahead is recommended.

If you’re heading to the Stampede grounds, consider making your first stop a good one — a proper cocktail, people who know what they’re pouring, and a back bar that’s been built with intention. No plastic cups, no line dancing, no mystery liquor.

We’ll be here all Stampede, pouring drinks the way we like to make them. Drop in before the tents, after the grounds, or whenever you’re looking for a quieter corner and something worth drinking. There’s plenty of time for warm, pricey beer after.

Tanqueray No. Ten brings fresh citrus to the front, layered with Lillet and sherry for softness and texture. Fernet adds its unmistakable herbal bitterness, while lemon keeps everything crisp and lifted.
