Just wanted to take a minute to mention the importance of reservations.

I know the last 2 or 3 weeks we've had some disappointed folks on Saturday nights because we sold out of Prime Rib pretty early. We determine how much we're going to have prepped or in this case cooked by how many people are on the books at noon on Saturday. Yesterday that number was 11 so we only cooked off one rib roast. We ended up doing a little over 50 covers last night. The previous Saturday at noon we had 35 booked and did almost 80. I had planned to do two roasts this week but that low number had us do just one.

Moral of the story I guess is having a reservation does a lot more than just lock you in for a table. Because we are a scratch kitchen it's how we determine how much food to make available each night. If you are coming in for Prime Rib please put that in the notes when you make your reservation.
