This weekend may be our soft opening, but we’ll be moving forward with regular hours from here:

Saturdays: 1–10 PM

Thank you to everyone who popped in to say hello during Market Night last night! It felt pretty incredible to finally welcome you into the new space.

A huge shoutout goes to LIFT, whose support helped make this dream possible—and to the entire Wildcat crew, who poured an unbelievable amount of blood, sweat, tears, time, and heart into bringing it all to life.

Please bear with us as we get settled, work out the kinks, and get everything running smoothly in our new home.

And stay tuned—we’re planning a huge Grand Opening Celebration on Saturday, September 26, with plenty more information coming soon.

We’re a day late with this post—but only because we were busy celebrating properly!

Yesterday, family and friends gathered at the new tasting room to break it in and celebrate Kathy’s 70th birthday. Kathy Spurlin is Brad and Alissa’s mom and the owner of the beautiful farm where everything we make begins.

Her generosity, support, and stewardship of the farm have helped make all of this possible. We truly couldn’t do what we do without her, and we’re so grateful for everything she contributes to our family, our work, and this wild adventure.

Happy 70th birthday, Kathy! We couldn’t think of a better reason—or a better person—to help us break in the new space. ❤️

With all the excitement surrounding the new tasting room, it's easy to forget that's only one piece of what we do.

The real work is still happening behind the scenes.

Today we're proofing whiskey—carefully bringing each batch to bottling proof before it heads to the bottle. It's a process built on science, precision, patience, and consistency.

Sure, we're proud farmers. We grow the grain. We mill it. We distill it. But great whiskey doesn't happen by accident.

The tasting room may be getting all the attention right now, but don't worry... we're still doing what we've always done: making damn good whiskey.
