Friends, Romans, countrymen, lend me your ears GTC has finally upgraded to all grain and 10 gallon batches baby. The first product to roll off the line is our Festum de Anna Perenna IPA or in translation the festival of Anna Pernna. This festival is an old Roman celebration that was rocked out at the first full moon of the new year, which was March in Roman times. This is also by definition, the Ides of March and falls on the 27th of this year. The release party of this ale is the 30th so I thought the name would be fitting. Plus the festival sounded like a good time since it involved drunkenness as well as sexual and verbal freedoms.
This IPA will definitely assist in drunkenness and some verbal freedoms but I'm not so sure about the sexual aspect. The Festum is gonna be a hard hitting citrusy full body IPA with an ABV around 6.5% to 7%. It was brewed with Simcoe and Citra hops and will be dry hopped with more Citra hops. The IBU for the Festum is 55 so its a little higher from my other IPAs but should be balanced just fine with the grains used. So if any of you fellow citizens of Rome want to indulge in the festivities come on out. Ovantis!!!

There is no messing around when comes down to GTC's Irish American Heritage and brewing. In celebration of St. Paddy's Day and in honor of the Irish immigrants who accomplished some astonishing back breaking engineering feats,we have designed a special brew. A brew that represents a local group of Chicago Irish Immigrants that were involved in the construction of the Illinois and Michigan Canals. The work was considered dangerous and many workers died, although no official records exist to indicate how many. These Irish immigrants who busted their asses day after day to build the canal were often looked upon as a sub-class and were treated very poorly by other citizens of the city of Chicago. To salute these Chicago Irish Americans we have come up with "The Canal Digger" an Imperial Irish American Stout aged in Jameson Whiskey soaked oak chips. Its basically a fusion of Irish and American stout. It won't be as dry as an Irish stout but smoother and sweeter to balance the Jameson. The color will be dark as night and the ABV will be 8.5% to represent the strength of the Chicago Irish American. We will be bottling these bad boys in time for everyone to enjoy the festivities of St. Patrick's Day with this awesome brew and to allow others to drink this stout who are out of state. Sláinte!!!

Alright were back, been busy as a m**o with the relocation our new headquarters at my mother in laws and all the lovely holiday business. Now back to business. So I've got a bad boy fermenting right now in primary. Its a new style for us being a Baltic Porter.

I have chosen this type of porter for two reasons. #1 This brew will be for our annual tailgating event at the Winter Norgi Ski Jump in Fox River Grove and I feel a porter would be a good style for the winter conditions. #2 this style would represent the Baltic Sea area where the origins of the ski jumping came to be and to represent the area where this style of porter originated as well. This Baltic Porter, called Norgi's Yard Sale Porter, is low in IBUs, has malty and caramel flavors and aroma, and is dark brown color with an ABV of only 7%. The ABV is only 7% because I didn't want tailgaters to pass out in their own yellow snow.

Oh and if you don't know the skiing term Yard Sale its when a skier wipes out so bad that they loose their skis and poles. In the case of ski jumping it would be just their skis since they jump without poles. So Skål everybody.

In less than a month GTC will be heading out to the ND vs. PITT game for some tailgating fun. In preparation we will brewing up two hearty ales for the tailgating festivities. The first to be brewed will be the Wuichsteiner IPA. This baby is to honor my good friend Ryan Wuich, the soon to be wedded, who actually came up with the name and concept of the brew. It will be very similar to our She Wolf but it will have different malts and hops. It will be a light body, lower IBU (60), strong citrus hopped IPA with a punch to the face ABV of 9%. The second is a Imperial Coffee Porter. Its a very basic strong porter that will help keep us warm in the November chill. It will have an coffee backbone but not to forefront and I will add a little lactose to help mellow it out a little and of coarse have an ABV of 9% as well. Cheers
