Green Springs Bistro

Green Springs Bistro Gulf Coast Cookin’ … and then some. The Gulf of Mexico … bordered by five states and numerous countries. Enjoy! Chef Paul Kapsalis and Kris Kubik, owners
(384)

Its Coast is culturally diverse, and its cuisine reflects that, with a richness in flavors as unique as the people who live there. At Green Springs Bistro, Chef Paul Kapsalis celebrates this regional cuisine, interweaving its cultural flavors into an experience that is, indeed, worthy of time deliciously spent. Great seafood, steaks, chops, and then some … drawn from recipes and with ingredients l

ocal to the Gulf Coast. (And, of course, as a tribute to his own Mediterranean coastal heritage, Chef Paul can’t resist sharing a few of his childhood treasures … and then some.) Experience for yourself, the excellence and genuine hospitality that is Green Springs.

Follow us on our new page ... South of the Seven ... and give us a LIKE for updates on our progress.

Sooooooooo ...
We have been working hard as well as playing hard!! We put a little video together about 6 weeks ago. There has been much progress since then ... table painting party, swinging fishing rod rack, crazy epoxy experiments! We're starting to get close, so we'll be filling you all in.

Things are taking a little longer than we expected (the kitchen is in the dining room at the moment!). There is truth to the phrase "Livin' on Keys time." But we'll be sure to let you know when we're about to turn on the "open sign".

Over the past 18 years, we have been fortunate to live our dream in Safety Harbor and have the opportunity to share it with others. We created that dream in two little old houses with the help of countless talented people who worked hard alongside of us throughout the years. If you frequented us regularly, you became part of our Green Springs Family and we greatly appreciate you. You’ve included us in just about every celebration imaginable, and we’ve been fortunate to have shared many touching times with you. It has been our sincere pleasure, and we’re forever grateful for the countless amazing friends and family we’ve gained.

This past September, when the Big Storm came through, we were drawn to our “second home” in the Lower Keys. After many trips down to help out and after the chain saws slowly quieted down, we were offered an opportunity to bring our passion and talents to create a restaurant on Sugarloaf Key. So, we are heading down south once again to begin the next chapter of our lives with our Keys family.

We are passing the Green Springs torch to longtime friends, Tom Golden and Richard Alday, and our brother, Chef Jason Rodis. We wish them well in all the exciting plans they have for Her future. Please go by and welcome them to the neighborhood.

Circumstances prevented us from making an announcement earlier, and that sincerely breaks our hearts. We so wanted the chance to share our news with many of you during the last few months. Know that we will remember all of you sitting at your favorite tables enjoying your favorite meals or just hanging out at the bar sharing stories. And to each of you, we say a heartfelt “Thank you.”

Thank you to all of you who have helped us get to this point. The list is vast, and we are so grateful for each and every one of you. These past 18 years with Green Springs in Safety Harbor have been some of the best years of our lives, and we can't imagine having spent those years any differently. We thank you for supporting us, believing in us, and allowing us to be there with you along the way. You have truly completed our memories.

We will feel each of you with us as we embark on our new adventure. Please come visit us on Sugarloaf! Stay tuned for details!

With much love … Kris Kubik and Chef Paul Kapsalis

Michael is home! His hospital recovery was a bit complicated due to a partial lung collapse. His progress, however has been slow, but stable.

Yesterday, his son, James, stopped by to pick up his guitar ... a sure sign that Michael is "itching" to return to playing music.

He sends his thanks for everyone's continued support, It has gone a long way in alleviating his stress about being able to provide for his family during his recovery. Although he has a bit of a bumpy road ahead of him, if Michael keeps progressing as steadily as he has been, we're sure to hear his music in the not-so-distant future!
