Meet Austin.

“I don’t sell alcohol. I create memories.”

For Austin, every cocktail is tied to a feeling, a memory, or an experience. Whether it’s inspired by a place, a conversation, or a moment in time, he believes the best drinks don’t just taste good - they make you remember something.

After five years of active military service and time behind the bar at some of Northwest Arkansas’s favorite spots, Austin was drawn to Chuo by the opportunity to learn from Shaun and be surrounded by a team that pushes creativity every day.

His favorite part of bartending isn’t just creating cocktails, it’s hearing your stories, sharing conversations, and helping create memories you’ll take with you long after the last sip.

Our Carrot Pavé showcases them four different ways—roasted, compressed, pickled, and juiced. Paired with apple gelée and a silken tofu whip, it’s a fun contrast between the rustic, humble carrot and the contemporary techniques we use to bring it to life.”
