A Wrinkle in Thyme started with a taste of St. George’s wonderfully punchy basil eau de vie and the question of what to build around it.

Tequila gives it the bones of a classic daisy, with chamomile-thyme syrup playing off the basil’s herbaceous side. The whole cocktail is clarified through a fondue of goat cheese, supplementing bright and vegetal qualities while wholly imparting a lactic tang.

The final product? Refreshing, nuanced, and the perfect drink for late summer evenings 🪻🌱
