Know your guests...

Back before the internet, we have a 3 ring binder organized alphabetically by customers last names. We updated it to include what they liked, when they usually dined with us and where they liked to sit.

Most current reservation systems now do this automatically. Hopefully employees take full advantage of the info and truly give great service not because their computer tells them, but because they truly care about giving their guests an experience they will remember far into the future.

"Far into the future?"

Example... it's been well over 20 years since the Classic served it's last table side Caesar Salad, but I STILL get requests for the recipe!

The funny part is I currently work at Twin River Casino and we still allow smoking.

Yes, by habit, and because it is proper customer service, I still light ci******es. You cannot believe the great response I get.

Try teaching that to your employees, because it is the basis of great service... Why? Because no matter how busy or how important you think you are... Lighting a cigar or cigarette means that you are paying attention to your surroundings... If you are quicker than they are... YOU ROCK!

One of my first lessons ever taught to me popped into my conversation tonight. Taught to me by one of the best bartenders EVER... When I was only 8 years old.

BALANCE-

A bar is a ship, and every ship must be balanced. If you have an item on one side of the ship, you MUST have the same item on the other side. After all, a ship out of balance will sink.

I use this analogy every chance I get.
