Next up on our Sustainable Liquor Spotlight: , a Chicago-based, female-owned independent craft distillery. KOVAL stood out to Beverage Director Brendan Bartley for a number of reasons.

They built the world's largest windmill to help power their distillery in addition to spearheading -focused cocktail competitions, pop-up bars, and reimagined cocktails using locally-sourced ingredients. A note on our . We use glasses by not only because of their exceptional quality, but also because they’re made from 80% recycled glass. Glass can be recycled endlessly by crushing, blending, and melting it together, and doing so benefits manufacturers, the environment, and consumers. Each year only one-third of the roughly 10 million metric tons of glass that Americans throw away is recycled. The rest ends up in landfills. So the next time you chuck a glass, aim for the recycling bin.
