Spending years within the Wolfgang Puck universe from Istanbul to Maui, Miron brings a globally layered perspective to the kitchen, one shaped as much by travel and cultural exchange as fine dining technique. At Gemma, that translates into modern Pan-Asian cuisine that feels transportive yet grounded: delicate dim sum, wok-fired specialties, pristine seafood, Japanese Wagyu, and vibrant dishes inspired by the bold, aromatic flavors of Thailand, Singapore, Japan, and the broader Pacific Rim, all softened through a distinctly Southern California sensibility.

As part of our ongoing commitment to delivering exceptional experiences at Waldorf Astoria Beverly Hills, we are pleased to share that The Rooftop restaurant and pool deck will be updated with a stunning new look beginning February 2.

During this brief enhancement period, the rooftop will be closed to the public, and we will offer curated dining experiences in our other spaces throughout the hotel.

We look forward to unveiling the dynamic new spaces at The Rooftop in early spring.
