Our raw bar offering has expanded!

As promised, here’s a closer look at the latest additions to our seafood towers: cold-water lobster claw finished with olive oil and fines herbes, pickled jumbo gulf shrimp, za’atar crusted tuna tataki with spring greens, marinated white anchovies, crispy rice paper chips, and house-made gremolata crackers.

Designed for sharing and built around contrast, the towers continue to showcase a rotating collection of thoughtfully prepared raw and chilled offerings.

Available in three sizes alongside chilled jumbo shrimp, rotating oysters on the half shell, and an assortment of tinned fish at the raw bar.

All Greek Tommy* | Tommyrotter Gin, Mastiha, Basil Eau de vie, Yuzu Curaçao, Greek Yogurt Wash, Cucumber

Created by Nick, All Greek Tommy was inspired by the phrase “It’s all Greek to me,” layering bright Mediterranean influence into a spirit-forward and unexpectedly complex summer cocktail.

At its core is Tommyrotter Gin, an over-proof barrel-aged gin with enough intensity to stand up to the cocktail’s cooling elements without losing its edge. Greek mastiha remains the focal point throughout with herbal, lightly resinous, and subtly sweet notes, supported by cucumber, basil eau de vie, yuzu curaçao, and a Greek yogurt wash that softens and rounds the sharper corners of the spirit.

Served crystal clear over a single large cube with a slice of cucumber, it drinks with the brightness of a summer refreshment with the depth and structure of a proper martini-style cocktail.

Crisp, herbal, citrusy, and deceptively strong.

This dish is built around exceptional beef. Sourced from Stonyrun Farms in northern Chester County, the wagyu is raised with extraordinary care. pasture-fed early on, then grain-finished for over 300 days, each carefully selected cut develops the marbling, tenderness, and rich flavor Wagyu is known for.

Because we work with whole cuts and source based on quality and availability, our preparation changes regularly. From bavette to bone-in ribeye, the cut may vary but the quality is always there.

Arugula and pickled red onion bring brightness and contrast, while bone marrow vinaigrette, hotel butter, and powdered tallow reinforce the natural richness of the steak without overwhelming it.

A cocktail with a presentation nearly as memorable as the first sip.

Inspired by torrone, the centuries-old nougat confection found across the Mediterranean, known for its airy texture and toasted nuts. Head In The Clouds brings together raspberry, pistachio, citrus, and bourbon in a cocktail that is both smooth and bright. Finished with a marbled egg white foam, it has quickly become one of our most recognizable signature cocktails behind the bar.
