🌀🍸🌀 HURRICANE SPECIAL: Squable X TCS. 6pm-12am Friday the 12th (and maybe Sunday, the 14th, depending on if Squable gets power back). ALL proceeds going to the staff who will be serving up their cocktails as a throwback for everyone who misses cocktails paired with jazz.

What a weekend! We miss Tongue-Cut Sparrow, but we know this space being used for private events (Christmas parties, wedding receptions, corporate events, brand launches, etc.) is best for our team - more info at refugehouston.com. We are also very proud of how continues TCS’s legacy upstairs above this event space in a new environment that is more accessible but just as ambitious. If you haven’t been yet, you need to visit us.

All that said, it was fun to revisit the music and service of Tongue-Cut Sparrow for a couple of days. We will always miss TCS - especially downtown where we were forced to move the bar during the chaos of 2020. And it was nice to have all of your share that with us this weekend. Will we do more TCS events in the future? We aren’t sure. We know that moving TCS to Montrose in 2020, and then turning TCS into Refuge’s upstairs cocktail bar with an event space downstairs has been confusing (like so many things the past two years). So, we don’t want to muddle this transition in a way that hurts our businesses. But we might be open to more of these evenings in the future; we’ll keep you posted!

We opened Refuge] on the 2nd floor of our current location of . And, yes, this is the permanent bar that TCS has evolved into. We still offer hot towels, snacks, and what we think are even better cocktails in nicer glassware, BUT there are some differences. The room is smaller and moodier. The music is different, less formal and more entertaining, but still perfect for a special occasion. If you love, Tongue-Cut Sparrow, we are confident you will love Refuge (maybe even more). Our downstairs space will transition into an event space following a remodel over the next month and will share the name, Refuge.

WE ARE OPEN TUESDAYS now at Refuge to Saturday from 5:00pm-1:00am. We will still offer a limited number of reservations daily, but we will be much more WALK-IN FOCUSED. When full, guests will be able to wait next door at Anvil (we didn’t offer this previously). Outside of peak hours, we don’t expect this to be necessary for most. Like TCS, our maximum party size is 6. We have opened a limited number of reservations via Resy today for this week and will do so weekly through May, giving us time to adjust to the new space. (We only take reservations via Resy, not over the phone. Again, WALK-INS are our primary focus.)

Tongue-Cut Sparrow was a bar that and opened downtown years ago, and while we are extremely proud of the version of Tongue-Cut Sparrow we had to move to Montrose during the pandemic, it was never the same for us (despite all the love it received ❤️). We don’t feel like we are “closing” Tongue-Cut Sparrow as much as we are reshaping it into a bar that fits this space and rebranding it for clarity and to better represent this new identity. A bar’s personality cannot be separated from the buildings and rooms they occupy. We are extremely proud of Tongue-Cut Sparrow and how we have chosen to take it into the future. Thank you so much for supporting Tongue-Cut Sparrow, and we hope you’ll support our choice to move in this direction with the same team you know and love.

One day, a version of “Tongue-Cut Sparrow” may return in its original form, but for now, we are excited for Refuge].

Not much better in life than a Collins in spring, so why not make your bar experience a Royale here at Tongue-Cut Sparrow? Our Collins Royale is an upgraded take on the classic with Gin, Blanc Quinquina, Lemon, and Sparkling Wine. Book a reservation on Resy or just pop-in, as we always have some room for walk-ins. Vibrant, fresh cocktails are usually a summer stalwart, but our exceptional team knows to scratch that itch in the winter too. Our Tequila Cup emphasizes the depth of raspberry and tips it’s further into coat season with ruby port. At the same time, this cocktail is chilled and vibrant while strongly showing a bracing Tequila backbone. It’s a delicate balance that we overthought and then put in a beautiful glass so you don’t have to.

Reservations open this week via Resy, but remember we also always save half the room for walk-ins.

LAST WEEK for this cocktail menu. Almost all of the drinks are gone after Saturday, so get in here before your favorite says goodbye forever. Breaking up is never easy but cocktails always ease the pain, especially new ones.

The Dot and the Line: a romance in primary colors. The cocktail takes the name of the 1965 Academy Award winning animated short film directed by Chuck Jones; in which a blue line tries to win the affections of a red dot. The short is in itself a study of shape, color and the mathematics of romance. Our cocktail takes its bases and layers them by density to make a classic silver fizz lay atop a classic golden fizz. The airy cloudlike start of the silver (gin, egg white and lime) becomes the textural framework for the lemon custard like body of the golden (gin, egg yolk, lemon) below. Visually it is both a direct reference to the short and its own compositional study of proportionate balance in primary colors.

The Golden Gate Cocktail.
Originally published in the Savoy Cocktail Book in 1930, the Golden Gate exists as a lost anomaly. No descriptions, pictures or illustrations exist to give us insight into the meaning of the ingredients (orange ice, gin, shake without ice) which are not defined in the book. Tackling the challenge of a rarely balanced orange flavored classic, we used all of the components of Oranges and reconstituted fresh squeezed Oranges with them. Re acidified, balanced with natural sugar and with an added boost of the natural yellow pectin found in orange pith, the Golden Gate intensifies all that we love about Oranges. Combining that with frozen gin and omitting ice in the process we bring this classic back with the nostalgic look of our childhood orange juice memories.

And yes, we are aware that most orange-centric cocktails are awful. We were up for the challenge.
