Hi friends,
It's with a heavy heart that I announce that The Vault has celebrated its last night of revelry this evening.
I cannot be more proud of what we've accomplished at this tiny micro-concept pop up. We attained the success of becoming a Best of NH restaurant, hitting major revenue milestones, and proudly serving the hungry hearts of the many neighbors that came knocking on our door. We've done this all without any gas range or deep fryers, but only induction and convection equipment. We've established a vibe unlike any other, and worked tirelessly to support our vision. A vision that our loyal guests have continued to share a great admiration for- something that will forever drive us.
Our efforts haven't been fruitless. We've achieved things we didn't think were possible, and continue to surprise even ourselves. But the bleak reality is that the deal that drew us into this property wasn't quite what it seemed.
Almost two years ago, we first came into this historic building with starry eyes and big dreams. We began the process of purchasing this building and restoring the state of neglect that it was left in. After we began investing in the property, we became aware of a pretty big issue impacting the sale of the property that the sellers' failed to take care of appropriately ahead of time and it became very clear to us that the reality was that our long term home was not going to be this building.
With that being said, I've considered many options, and I've realized that life is far too short to not take every opportunity to explore the world and to do what I love at the same time. Our future is on wheels, and it involves visiting as many communities across this country as possible, humbly serving flavors like Shish Tawook, Mozambique, Zeppelin, Butter Chicken, and African Spice Noodles to places near and far.
This is my "Chef" moment people- if you've seen the movie, you know exactly what I'm talking about.
We are keeping our fingers crossed that the sellers' will have it in their hearts to do the right thing and reimburse us for the investments we made under the false assumption of a sale for the purpose of making their building safe and operational (but we aren't holding our breaths.)
I can't thank every member of our "extended family" that visited our home from near and far and vibed with us and appreciates all that The Vault has to offer.
To Jess, Krissy, Hannah, Bre, and especially Sarah, I can't thank you enough for everything you've done to deliver this funky not fancy and extremely fun experience to this town. The Vault squad will always have a unique bond tied by the love for what we do. ๐
To my momma, Lissa, the mom of the house, I'm so glad that the people of Gorham got to experience the warmth and love that I experienced growing up with your smile and presence in the dining room most nights. You are this restaurant's unsung hero.
You'll hear more from us. Although we're moving on from this project, we still have much in store for the future. Luke, Amanda, and I will never stop creating.
