The sun is setting, the curtain is closing, the hour draws nigh. Know that it has been our profound honor and joy to serve you these last 8 years. I wish I could convey the depth of all the beautiful moments and memories made in this space, and especially those that you shared these last few weeks, but alas, words are a leaky sieve for capturing feelings. That upon which we cannot speak must pass over in silence.

We've been discussing Castalia's return to a vaporous state as a poignant metaphor, but the weird weather yesterday made it a reality. Our final service last Saturday was a joy, thank you to everyone who came through and shared their stories and memories!

Sfumato’s online shop will still be open in 2026, but only carrying full size fragrances. Retail hours 12/26 and 12/27 noon-4:30pm. In-store only.

Ftom Jaz': Castalia was a beloved step in my journey to where I am today.  Beyond pairing flavor to fragrance, which has been foundational in my approach to building sensory experiences for , opening this space also taught me the value of listening, loosening my grip, and letting an idea grow into itself. I'm a better person, a better bartender, and a better educator for having worked here.

Cocktail Theory II: Data-Driven Drinks! Our co-founder is nearing completion of his second book, a statistics-fueled analysis of how underlying preferences guide cocktail enjoyment. If you've done the tasting menu at Castalia in the last 3 years, you had the option to fill out a survey rating the drinks, and asking a few extra questions about your flavor history. With more than 1,000 of these surveys completed, a massive breakdown of the relationships between flavor and drink preference is underway.
