"I went in expecting dinner… and left questioning reality.
The Grand Illusion Dinner at Blue Flame inside The Daytona, Autograph Collection doesn’t just play with illusions — it starts with the food.
Because nothing on this menu is what it looks like.
An “ice cream cone” that’s actually a savory bite — smoked salmon mousse tucked into a waffle cone, resting in a jar of “sprinkles.”
“Dirt and worms” that turns into roasted beets, goat cheese, pistachio, and balsamic pearls the second you take a bite.
“Spaghetti and meatballs” that completely flips expectations with scallops, squash, and tomato basil foam.
And a “grilled cheese and tomato soup” that somehow becomes a brûléed pound cake with lemon curd and strawberry.
Every course felt like its own illusion — familiar at first glance, and then completely redefined.
And just when you think you’ve adjusted… the magic starts happening right at your table.
No stage. No distance. No explanation.
Just a series of “there’s no way that just happened” moments unfolding between bites and cocktails that were just as playful as the dishes themselves.
It’s rare to find something that feels this immersive — where the atmosphere, the flavors, and the experience all work together to keep you just slightly off-balance in the best way.
I genuinely wish I could experience this all over again — not just for the illusions, but because every single course was that good.
