Chef Hunter Conklin puts his own touch on Chicken Cordon Bleu, pairing locally sourced ingredients with roasted chicken breast, smoked ham, swiss, mushroom duxelles, and spinach crepe, finished with sauce fine herbs.

Get to know our Sous Chef, Twan Ellington!

For Twan, cooking started as a way to care for himself after moving out, but quickly became something more. After working in the kitchen since 2021, his love for cooking continues to shape his work in the kitchen and beyond.

When he’s not at One Broad, you’ll likely still find him cooking, whether it’s for guests or just for himself. His favorite dish? Coq au Vin. Twan’s favorite thing about cooking at Brasserie La Banque is learning about French culture alongside Chef Hunter Conklin.

Looking ahead to the winter menu, Twan has his sights set on one dish: Lobster Thermidor.
