BANANA, BUT BETTER…
Meet Banana, But Better… — a clarified banana–tequila cocktail designed to take banana from playful to truly elegant.
We start by infusing freeze-dried bananas into Tapatío Blanco 110 — pulling out pure, fresh banana flavor with zero artificial notes. Then we layer in Banane du Brésil for natural richness, Yellow Chartreuse for herbal complexity, and a touch of dry vermouth for balance.
The whole batch is milk-washed and clarified, making it glass-clear and unbelievably smooth — with a bright finish from citric acid and a subtle bitter snap from Peychaud’s.
We stir it ice-cold, serve it up in a Nick & Nora, and give the rim a dusting of house-made dehydrated banana dust — a soft aromatic halo that enhances every sip.

Twice a year, we take the Negroni — that beloved bitter classic — and make it our own.
Bitter & Bound is this season’s evolution: richer, deeper, and irresistibly elegant.
We swap gin for VSOP Cognac, adding warmth, silk, and a little luxury to the backbone of Campari. Cardamaro, an herbal wine liqueur made with cardoon and spices, brings soft sweetness and layers of earthy, honeyed depth. A touch of Fino sherry keeps the finish dry and nutty, letting the bitterness land clean and satisfying.
Stirred cold, poured over a sharp 2” clear cube, and crowned with a sugar-dipped brûléed orange wedge — caramelized until it’s glossy and fragrant — the first thing you smell is citrus fire.
It’s familiar, but transformed.
A Negroni, dressed in velvet.
Bitter. And absolutely bound to become your new go-to.

PIECE OF CAKE
What does it take to make a cocktail taste like vanilla cake? Time, patience… and a lot of real vanilla.
We infuse Madagascar vanilla beans directly into vodka until it’s loaded with soft, creamy aromatics. Then we layer in white port for a velvety backbone, Licor 43 for warm baking-spice notes, orzata for round sweetness, and a touch of Poli Grappa to keep the finish bright and clean. Lemon curd adds that unmistakable citrus snap — like the top of a lemon-vanilla cake.
Then comes the magic: we milk-wash the entire batch to clarify it, stripping harshness while making the cocktail crystal clear and unbelievably smooth.
Before it hits the glass, we mist the inside with brown-butter Stroh — a quick spritz that melts into the drink as the crystal-clear ice slowly softens, developing richer cake-like flavors with every sip.
To finish, we crown it with hand-torched vanilla meringue — warm on top, cool underneath, with a little tableside theater.
