In partnership with the Japan Sake and Shochu Makers Association, our very own Cocktail & Bar Manager hosted a master class on Shochu where he discussed production methods, product classification, and his strategies for making menu worthy Shochu cocktails. Additionally, Mark prepared a tasting of 21 different Shochu showcasing the wide flavor diversity within each category and style of Shochu, and how specific production choices lead to unique flavor outcomes.
The JSS is Japanโs largest nonprofit organization whose sole mission is to support the Sake and Shochu industries, not only directly at the production level, but with consumer and bartender education as well. Every year they host a Shochu cocktail competition in the United States, with several seminars held nationwide by industry experts to better prepare participants for their entry.
Mark Mentzel has been with Atlas Restaurant Group for seven years, beginning his career as a cocktail server at The Elk Room. He now oversees the bar and cocktail programs of Atlasโ Maryland, Texas, and Pennsylvania properties. Mark has his Level 2 Certification in Sake through WSET, and recently attended an advanced week long course on Shochu in Kagoshima, Japan with the JSS. Heโs very excited to begin designing the beverage program for Kannon, Atlasโ upcoming Izakaya inspired location, where he will be showcasing the best that Sake and Shochu have to offer.
