HIMKOK at Tavern.

On June 16, we welcome one of the bars that helped define modern Scandinavian cocktail culture. Since opening in Oslo in 2015, Himkok has become a fixture on the list, known for its in-house distillery, Nordic ingredients and a style that balances precision with playfulness.

For one night, the team brings that spirit to Tavern.

‘’atom kokoreç.” lamb sweetbreads wrapped in intestines, slowly caramelized over charcoal while we keep brushing on our tare. pul biber and thyme crackle on top, a nod to the street stalls we grew up with. on the side: cumin emulsion, some pickles, spring onions. all tucked into our fresh bread. rich, smoky, sweet and spicy. nothing fancy. everything perfect.

Built around the idea of green plum without relying on green plum itself.

It actually began elsewhere. For a long time, we avoided putting a sorrel cocktail on the menu, waiting to find a version that felt worth doing. Somewhere in that process, while working through different techniques, we accidentally landed on something that tasted remarkably like green plum.

Cold-brewed kabusecha brings bitterness and structure. Vodka is infused with sorrel and arugula, adding sharp herbal notes and a gentle peppery edge.

Carbonation ties everything together, lifting the aromatics and keeping the profile crisp from start to finish.

The result feels strangely familiar.

Bitter, botanical, crisp.

It tastes like green plum.The recipe says otherwise.

bosnian dumplings, kaffir lime yoghurt, chili crunch

not a dumpling in form, but it fits the spirit. we call it “mantı” but honestly it’s just “börek”.

wafer-thin, hand-rolled dough filled with chopped (not minced!) meat and baked till golden. served with an addictive yoghurt sauce infused with kaffir lime leaves, finished with chili crunch for some heat.

might already be everyone’s favorite. soon we’ll do it over charcoal, where it truly belongs. that’s when it gets really interesting.

not to force a semantics game here but as Ayfer Yavi puts it, mantı is börek, and so is baklava, just a sweet one. excluding them would be forgetting the hands that carried these dishes across lands, borders, and centuries.

so eat your dumplings and don’t forget where they come from.
