soka, Maraş tarhana & nori chips

Essentially, Maraş tarhana is a fermented crisp made with goat yoghurt and cracked wheat. We fry it in olive oil. it becomes super crunchy, tangy and full of deep, toasty flavor. For dipping we pair it with soka, another ferment. It’s punchy, sour, intensely creamy and funky. Lots of lemon zest to brighten it up and some nori sheets for a umami kick.

A snack built around fermentation. Ideal with a cold bitter&sweet drink in hand.

Ford’s Gin meets a syrup made from Hatay-style cracked olives, clarified until crystal clear. Fresh lime, jujube vinegar and a restrained touch of foam complete the structure.

Savory yet bright. Salty yet delicate.

Inspired by Turkish painter and poet Gürkan Coşkun, known as Komet, whose work moved effortlessly between dream and reality, abstraction and emotion.
