Stir fried Soft shell crab with salt and pepper - “Phoo Nim Pad Prik Kruae”
Soft-shell crabs are deep-fried until crispy and crunchy before being stir-fried with chilli, garlic and a variety of seasonings being added. A fusion of Chinese and Thai influence of a dish has a little spicy kick to it along with crunchy textures from the crispy chopped garlic and the soft-shell crab making this dish a joy to your palette.

“Massamun Kam Wua”

Massaman curry is a fusion of Thai and Indian-style curries, utilizing both a red-style curry paste (Thai influence) and dry whole spices like cumin, coriander, cinnamon, and nutmeg (Indian influence). Another essential ingredient is roasted peanuts, which add an extra layer of richness and texture to the curry. Our variation on this curry is that we use stewed beef cheek that has been cooked and simmered overheat with fresh herbs such as lemongrass and kaffir lime leaves for at least 4 hours to achieve soft and tender texture. Beef cheek also possess the quality of a unique gamey aroma that stands up perfectly to the intense flavors of Massamun curry.

Green curry with braised silver striped beef

“Gang Kiew Waan” is one of the staple of Thai cuisine and still is til this very day. Our take on this classic curry menu is that we use silver striped beef specifically for its soft yet, slightly chewy texture when braised over the heat with herbs and spices for 4 hours. The curry paste that we choose to use is sourced from a local vendor that specializes in making pastes for curries. A combination of herbal, spicy flavors complemented by creaminess from coconut milk makes it a must-try. This dish can be enjoyed with steamed jasmine rice or even, fermented rice noodles or “Khanom Jeen.”

“Khanom jeen Nam-Ya Phoo”

A local dish that is widely known among the Thais across the country. It is a menu that is on top of people’s list whenever they make a visit to Samui and likewise, for the locals, it is a staple of a southern Thai cuisine. Southern curry paste is mixed with fresh coconut milk from the local farm and a handful of seasonings like fish sauce and palm sugar. Crab fried rice - “Khao-Pad Phoo”
A single dish that is one of our leading signature menu and best-seller.
Steamed jasmine rice is stir-fried with some garlic, salted fish, crab meat and eggs and a combination of seasonings on a sizzling hot pan till the rice turns into a slightly brownish color which resulted from sugar being caramelized for extra oomph of aroma. Stewed pork and eggs in brown sauce - “Kai Pha-Loh”

The spices are heated until fragrant, we then place the premium-cut pork belly into the pan to simmer with the spices and seasonings for hours. We let the pork and duck eggs cooked for extended period of time until the meats are steeped in flavors and the texture softens as if the pork belly is melted in the mouth, the duck eggs become more chewy and the sauce thickens which intensify the flavors as a result of a long period of reduction on heat. We do not use any of the traditional spices powder that are normally put into this dish instead we use freshly grinded spices and herbs namely, coriander roots and black pepper to emphasize the uniqueness of Grandma’s recipe and cooking wisdom that has been passed down from generation to another.
