A reimagination of the classic Paper Plane, flown through a nu-jazz flight path — channeling United Future Organisation, the Tokyo-born pioneers of nu-jazz and acid-jazz whose cosmopolitan grooves have soundtracked stylish lounges and late-night city wanderings since 1990.

In this citrus-forward cocktail, Maker’s Mark Bourbon’s bold, oaky flavours meet sansho pepper’s aromatic tingle, rounded out by Amaro Montenegro, lemon and Aperol, with a hint of peach carrying it to a fruity, lingering finish.

Rooted in Japan’s 24 solar terms, our monthly rotating menu shifts into August’s Beginning of Autumn (立秋) and Summer Heat (処暑).

Meet the crisp 𝗖𝗨𝗖𝗨𝗠𝗕𝗘𝗥 𝗠𝗔𝗥𝗧𝗜𝗡𝗜. It brings together Roku Sakura Gin, Cocchi Americano, Japanese cucumber, and a touch of habanero bitters. A refreshing wet style Martini with a light touch of spice.

𝗙𝗜𝗚 𝗪𝗛𝗜𝗦𝗞𝗬 𝗦𝗜𝗗𝗘𝗖𝗔𝗥 leans into late-summer richness — Hibiki Harmony Whisky and Haku Vodka are paired with fig, cherry brandy, Grand Marnier, and a bright squeeze of lemon. Layered and lightly sweet, this cocktail is a fitting toast to the season’s turn.
