For our first edition, we’re partnering with for their smashable signature rice bowls β€” tender beef cheek rendang, a savoury pork katsu curry with onsen egg, and an umami-rich sambal squid β€” each reinterpreted with fresh ingredients, in limited quantities, for one night only.

At Gibson, our interpretation of the classics has always made room for Southeast Asian ingredients. In this serve, banana flower takes the spotlight: earthy, gently bitter, and quietly distinctive.

Set within the familiar structure of a Gin & Tonic, it brings depth and texture to the finish, balanced by bright pomelo, soft banana notes, and the citrus-forward character of Tanglin Singapore Gin.

Our MF Martini at Gibson is built around texture as much as flavour, with frozen microbubbles shaping its final mouthfeel.

For this wet-style Martini, we first create a housemade orange tincture with vodka and orange peels. Gin and vermouth are then lifted with the tincture and Cocchi Americano, before being infused with COβ‚‚ and rested overnight at sub-zero temperatures.

Just before pouring, the Martini is stirred, releasing fine frozen microbubbles that create a delicate tingling sensation and a light, shifting texture across the palate.

Best paired with fries β€” after all, MF stands for β€œmade for fries”!

On Tuesday, 5 May, join us at Gibson from 8pm to 12am as we celebrate Jigger & Pony Group’s 14th Anniversary with a guest shift by Beijing’s Bar Long Fong!

Founded in 2019, Long Fong has become one of the city’s most distinctive cocktail bars, known for its precise yet expressive approach to modern cocktails. Bringing together ingredients from across China with ideas shaped beyond the traditional bar world, it has received major recognition across Mainland China, including Bar of the Year and Best Cocktail Menu at the 2023–2024 Drink Magazine Bar Awards North Region.

Xu and Fan lead Long Fong together as co-founders and life partners. Their path into hospitality began in the NGO world, where years of travel exposed them to global F&B projects, gradually shifting their focus from observing the industry to building within it. Today, they shape Long Fong through this evolving perspective. Xu leads the cocktail direction, translating ideas from beyond the industry into drinks that are structured, unusual, and precise.

Try their signature cocktails like the Hazelnut Treasure Box β€” a complex drink with The Macallan 12yo Double Cask Single Malt Whisky at its base, and forged around hazelnut in multiple forms, textures, and expressions.
