🏆 Best Restaurant Bar 2025 — Portugal 🇵🇹

Receiving this award at the Lisbon Bar Show means a lot to us, because SPIKES has never been just a restaurant.

We are a clubhouse between two golf courses, with two cocktail bars, open 365 days a year, from 7:00am until 00:30am.
While most clubhouses close at 6pm, we keep going: breakfasts, lunches, post-golf, dinners, cocktails and late nights.

This award represents the ability to maintain quality, energy and consistency for more than 17 hours a day, every single day of the year.

Most importantly, this award belongs to the people.
To the current team, and also to everyone who has been part of SPIKES over the years and helped build what we are today.

Thank you to our clients, partners and everyone who believes in the project.

Receber este prémio no Lisbon Bar Show tem um significado especial para nós, porque o SPIKES nunca foi apenas um restaurante.

Somos um clubhouse no centro de dois campos de golfe, com dois cocktail bars, abertos 365 dias por ano, das 7h00 até às 00h30.
Enquanto a maioria dos clubhouses fecha às 18h, nós continuamos: pequenos-almoços, almoços, pós-golfe, jantares, cocktails e noites completas.

Este prémio representa a capacidade de manter qualidade, energia e consistência durante mais de 17 horas por dia, todos os dias do ano.

E acima de tudo, este prémio pertence às pessoas.

We split open a bag of Whiskey Barrel Smoking Chips, lay them down in the smoker, and let time do what patience taught us. The olives surrender slowly, soaking in brine, breathing in smoke, becoming something they were never meant to be. Something darker. Something deeper.
Every Olivardier we serve carries this ritual inside it.
A garnish that remembers the barrel.
A cocktail that earned its name.
This is not decoration. This is devotion.

First masterclass in the books.

After 15 years behind the bar, I finally stepped into a different role — sharing knowledge instead of just applying it.

Together with Nelson Matos, we hosted a Jack Daniel’s masterclass: The Science and Dynamics of Flavor at Argo, Tivoli Vilamoura.

Nelson broke down the role of enzymes and how they shape what we taste. I followed with the science of aromas — how perception, memory, and chemistry come together in every glass.

This wasn’t just about drinks. It was about understanding why things taste the way they do — and how to control that.

Grateful for the opportunity, the room, and everyone who showed up.

This is just the beginning.

Um evento excecional não se mede apenas pelo que está no copo, mas pela energia que preenche o espaço. Acreditamos firmemente que não existem momentos verdadeiramente bons sem uma seleção musical real e cuidada e um ‘mix’ magistral. A atmosfera perfeita exige verdadeiros artistas atrás da cabine.

Por esse motivo, queremos expressar a nossa mais profunda gratidão aos dois fenomenais DJs portugueses que orquestraram o ritmo da nossa celebração. Um sincero obrigado ao Phill.me, que nos trouxe os sons vibrantes e sofisticados da Madeira (Three House), e ao talento local excecional do Algarve, o Djacob.

Os vossos ‘sets’ irrepreensíveis e intuição musical transformaram a noite, criando uma vibração imersiva e elegante que uniu toda a festa. Obrigado por elevarem o nosso aniversário a uma jornada sonora memorável.

Bringing the precise artistry of Barcelona’s 14 de la Rosa to our bar was a genuine distinction. We were deeply honored to host the exceptionally creative Maxime Staechelin for a remarkable guest shift, an evening that offered us all a masterclass in professional composition.

The centerpiece of the evening was Maxime’s sophisticated, Mediterranean reinterpretation of a Gimlet. Using the Gin Mare (a gin renowned for its botanical, olive, and saline profile) as his base, Maxime achieved a masterly balance. He intricately fused this complex spirit with the dry, delicate character of Sandeman Fino Sherry. For structure, he introduced vibrant, fresh notes of sweet orange, a subtle herbal touch of celery, and the sharp, bright acidity of lime. This Gimlet was a sensory paradox of profound, complex botanicals within a format of crystal clarity.

It was an absolute distinction to host the exceptionally talented Corentin Le Souder at our counter. Bringing the sophisticated spirit of Marlowe, Barcelona, Corentin transformed an ordinary evening into an unforgettable masterclass in technical precision and balanced flavor profiles.
His signature creation, Mirada de Pera, was the centerpiece, a striking blend of Gin Mare, the complex depth of lacto-fermented pear, and the unexpected peppery bite of arugula oil. It was a sensory journey that perfectly encapsulated the professional artistry of the modern Barcelona cocktail scene.
