The terrace had been transformed by the time I arrived.
Long tables ran the length of the space, each Thai dish arranged for hands that would arrive empty and leave full.

I started with the tom yum, the steam still rising from the ceramic pot.

By the time I reached the green curry and pad thai, my glass had been refilled without a word.

The candles burned lower than I expected.
The terrace had seen this before — birthdays, weddings, evenings that blurred together — and it showed in how the staff moved, knowing the next empty plate before it appeared.

I walked the buffet the way I walk a gallery, deciding which composition to commit to.

When I finally sat, the som tam was still crisp and the satay still warm.

The kitchen had timed it that way.
They knew we would linger longer at the line than at our seats.

They were right.

🇵🇦 The plate arrived and I forgot I was hungry.

The curry leaf sat where a painter would have signed a canvas. The chili oil had settled into cracks I had not made.

I understood, suddenly, that someone had stood over this the way I stood in front of paintings — deciding when to stop, when the empty space had said enough.

I reached for my phone. Then I put it down. I wanted to look at it longer than I tasted it. The mouth was fast. The eye was slow, and the eye was what I remembered the next morning.
I broke the papadum.

The sound was part of it. The first bite was not dinner. It was the destruction of something I had been given permission to destroy.

The kitchen had known I would do this. The plate was already empty in their minds.

I Ordered the Sushi to Test the Rice

I ordered the sushi because I wanted to know if the rice would still be warm when the fish reached the table. It was.
The toro softened before I even reached for the soy. The snapper was brighter than I expected — clean, almost citrusy.

I dipped only the fish side because the rice was already seasoned enough. The ginger stayed where it belonged: between bites, not on top of them.

By the tamago, I stopped comparing it to anywhere else. It tasted like the kitchen had timed the plate for the exact minute I was ready to pay attention.

We argue spring rolls or satay.

Maya shouts across to me about whether we need curry or just noodles. We cannot decide.

Then the kitchen doors swing open.

Three plates slice through our noise. Pad thai glistens with tamarind and crushed peanut. Green curry steams, basil leaves trembling on the surface. Crispy fish crackles against the table, glaze catching the light.

Our table goes quiet. Maya’s hand freezes over her menu. She takes one bite. Her eyes close. I taste the curry — coconut, chili, heat building slow and steady. We do not speak. Only forks click, rain taps the windows, and silence settles between us. You know you found the right place.

I was sweating through my shirt in a Panamá City rideshare, watching the rain come down in sheets. Our anniversary reservation at Avantika was in twelve minutes, and we were stuck in gridlock on Calle 50 — a truck had jackknifed two blocks ahead. Maya was doing that thing where she checks her watch without actually looking at it.
I called the restaurant. “We’re going to be late, maybe twenty minutes, I’m so sorry—”
“No stress,” the host said. “I’ll hold your table. Just get here safe.”
We finally pulled up at 7:35, soaked, flustered, expecting side-eye or a cramped corner spot. Instead, the host led us straight to our reserved table — still waiting, still perfect, a little candle flickering in the humid air. She handed us warm towels before we even sat down.
We ordered pad thai, green curry, and mango sticky rice. Every dish came out fast and flawless — the kind of flavors that make you forget you were ever stressed. When I apologized again for being late, our server just smiled and said, “You’re here now. That’s what the reservation was for.”
Maya reached across the table and squeezed my hand. The rain had ruined our plans for a sunset walk, but Avantika turned the night into the best part of the trip anyway.
