Lei cha or ground tea is a traditional Southern Chinese tea-based beverage or gruel that forms a part of Hakka cuisine.
Commonly known as "Thunder Tea Rice", lei cha got its name from the act of grinding tea leaves and herbs to make the tea-based soup which accompanies the rice bowl dish. "In Hakka, 'lui' means grind - so lui cha means to 'grind the tea'" she said.
A traditional bowl of lei cha fan contains rice and is chock full of fresh vegetables, tofu and nuts. However, the true highlight of any lei cha fan is the flavourful green soup that is served on the side.
