As a cocktail ingredient, we always felt soursop is under-utilised even though this tropical fruit is a staple in places like Jamaica and the Philippines. Mostly known in shakes or smoothies, the mellow flavours and milky texture of the fruit are delicious, but quite limiting in the use for cocktails.
We enhanced the aromatics of the fruit with new zealand sauvignon blanc, and added a bit of “body” (without overpowering the fruit) with silver leaf tea. Lastly, we add a drop of absinthe to help create a long and lingering after taste.

This cocktail all started with the question, how can we make a watermelon cocktail elegant and less ordinary? Well, mission accomplished.

We mix freshly juiced watermelon, milk, a dash of soy sauce, sesame and lemon in a container and clarify the cocktail by milk washing the liquid (see full process at Daun Kari post).

Store in bottle, and serve!
This is probably the most sophisticated watermelon cocktail you’ll ever see.

Any cocktail menu would be incomplete without the listing of an old-fashioned.
A classic cocktail that is respected by any bartender, it consists of oniy 3 ingredients: sugar, bitters and a spirit.

1. Spirit: We replaced the traditional American whiskey for a smooth Scotch and fat-washed it with cacao butter. A vegan friendly ingredient that gives an extra layer of texture and a mellow cacao flavour to the spirit.

2. Sugar: As sweetener we make a pineapple syrup. However we do this without boiling or adding any water at all. Making it as flavourful as possible. You simply cut a pineapple in tiny pieces (no skin of course) and mix it with sugar in equal weight (1:1). Leave it for an hour or 2, mix it around at times and you’ll see a thick honey like consistency of pineapple goodness.

3. Bitters: highlighting the cacao flavours, we use ready made cacao bitters from Bitter Truth, however we infuse them with extra cacao husks. Adding more umami flavours.

If you've never tried a clarified milk punch before, then we suggest you make trying as many as possible your new years resolution.

Some of the most delicious cocktails we have tasted are made using this technique of “milk-washing”. Simply explained; mix booze, spices & juices with milk, add lemon and let it curdle. Filter out the curds and voila, a beautifully clear liquid with the most sophisticated and elegant flavours in a cocktail is made.

Our clarified milk punch consists of fresh curry leaves (from our own garden), Sarawak pineapple juice, Peruvian pisco, lemon juice and of course… MILK!

One of our favourite cocktails on the menu. A botak twist on the classic negroni.

We “wash” gin with coconut oil, creating a fatty texture and adding lots of flavour in the spirit. Then we infuse sweet vermouth with banana flower, with the idea of making an tropical version of Cynar (artichoke amaro) banana flower and artichoke are interchangeable in many dishes. Lastly, we add a splash of Luxardo Bitter Bianco instead of the classic negroni ingredient Campari, to make the drink feel, look and taste brighter than the original.
