Reka:Coffee
Anyone who’s come to the bar knows that besides cocktails, we LOVE our coffee. We’ve been asked and have shared our coffee brew recipe quite a few times since we’ve introduced our new coffee cocktails, so here it is !
Equipment
* Any grinder with SSP brew burrs V1. Timemore 078, Femobook A4Z, or any grinder with a similar low fines, unimodal burrset.
* Abaca+ filter paper
* Hario Switch 02
* Any coffee scale with a timer
Recipe ☕️
1. Measure out 15g of coffee, grind finer than usual for brew.
2. Add 210-220g of 95c water. Go to 99c for ultra light roasts, and 90c for darker roasts, with the Hario switch valve closed. Start the timer.
3. Stir the top for 15s.
4. Release the Switch valve.
5. All the coffee should be fully drawn down into the cup after 45-60s, if too slow then grind coarser, if too fast then grind finer. At the end the coffee bed should be flat, if not then stir the top more in step 3.
6. Enjoy!
We’ve spent quite a bit of time dialing in this universal recipe - it’s the same one we use in the bar and for guest shifts. There are a number of geeky reasons why this recipe works but the proof is in the tasting so give it a whirl and let us know what you think in the comments!
