15 September 2019: Many of our guests, friends and family have asked Tracey and I what did we learn from our first season at No Sé Nada (Bar y Restaurante? First, our No Sé Nada (I know nothing) name has not only been great fun and enjoyed by our guests (they purchased nearly 500 of our logo t-shirts), it has also proven to be descriptive weekly....at times daily or more often for what we did not know and needed to learn. We were frequently humbled by the kindness, assistance, and willingness to educate us from many people that we did not even know prior to the opening of NSN. We experienced for ourselves what so many long in the Puerto Vallarta bar and restaurant business had shared with us would be one of the most challenging aspects...identifying and building relationships with a large number of suppliers to assure we would always have the products to create our menu items with the highest quality of ingredients.....One of my prior life managers may still be laughing when he learned that his previous senior executive was now having to spend a day or more, driving all over Banderas Bay in search of the exact correct potatoes required to make our homemade tator-tots! Lastly, and most importantly, we confirmed what we had believed when we began thinking about and planning to build a totally new dining and drinking destination in Puerto Vallarta; locals and visitors alike, have great appreciation for consistently great food, fine drinks and personable friendly service and they will return again and again and bring their friends with them. Tracey and I are extremely proud of what our team has accomplished in our first season and it is only going to get even better! A HUGE thank you to every one of our guests that decided to try No Sé Nada and then suggest to their friends that they should do the same! We are very excited to see you all soon.....NSN opens 04 October!!!
So...almost from the day we started dating there were the mutual sharing of dreams, aspirations, and ‘want-tos’. High our list was the hope and desire to be fortunate enough through hard work, dedication, love, family, friendship, and plain ol’ lucky breaks that one day we would be able to have a home in Mexico where we so love the people, culture, and the contagious energy of a rapidly developing country. Our 33 years together has been, and continues to be, amazing! Our careers as nurses and as a healthcare executive were extremely fulfilling, however, when the opportunity, timing and ability all came together to become “Residentes Permanentes” of Mexico, we followed the proper procedures and began keeping an active ear open for bar/restaurant ownership opportunities. This is what has led us to our current adventure with No Sé Nada; ‘a fine drinking and good eating establishment’. We, like we assume many new business owners, pondered and tested a great number of names with a wide variety of people from family and friends to marketing and branding professionals. Ultimately, it was the words from those that know us best and our response to their words that kept ringing in our ears; ‘what do you know about owning and operating a bar and restaurant’ and our response of I (we) know nothing....except.... treating people well, providing them an opportunity for a great time, AND trusting those that do know much about this industry here in Puerto Vallarta and seeking out and hiring a great team to move No Sé Nada from an interesting thought to a reality. Every day we feel like we are climbing the Mount Everest of learning curves, but we are climbing fast and look forward to having you join us starting this October at No Sé Nada!
