INGREDIENT / JUJUBE //

Jujube, sometimes referred to as Indian red date, has been used across Asia for centuries. Known for its natural sweetness and antioxidant-rich properties, the fruit carries a gentle tartness when fresh and a deeper, almost honeyed character as it matures.

We source ours from Assam, where the fruit grows in abundance across the region’s fertile plains and forested landscapes.

In our bar, ingredients like jujube represent more than flavour, they are a reminder of the diversity of produce that exists across the Northeast, many of which rarely find their way into the glass.

From Ka Jingim, our ingredient-driven menu, we introduce K&T.

At the centre of this drink is Yaid Krai, a slow-fermented millet liquor traditionally made by the Khasi and Jaintia communities of Meghalaya. Light, earthy, and gently sour, it reflects a style of fermentation deeply rooted in everyday life across the hills.

Cardamom and napa basil add lift and aroma, building a drink that is crisp, herbal, and refreshing while allowing the character of the spirit to remain front and centre.

From Ka Jingim, our ingredient-driven menu rooted in the food cultures of Northeast India.

Espress Ya’Self is built around locally grown coffee sourced from Smoky Falls Tribe in Meghalaya. Shaped by altitude and climate, the beans bring bold depth and natural intensity to the glass.

Balanced with gin, mandarin liqueur, and bitters, the cocktail is layered and deep, allowing the ingredient to lead.

Ka Jingim, which means “life” in the Khasi Language, looks closer at what grows, what is brewed, and what is shared within communities. Each cocktail is built around sourcing, seasonality, and respect for tradition, interpreted in our own way.
