CARAMELIZED ONION / BEEF / WARM SPICES

French Onion Old Fashioned

Despite its innovative nature, the French Onion Old Fashioned roots itself deeply in its namesake classic. In place of bitters, we‘ve decided to twist the classic by using Beef Consomme instead, adding rich allium flavours as well as nutty and vegetal notes via beef bone. The result is an Old Fashioned that might as well be called New Fashioned.

Caramelized Onion finds its way into the cocktail for its candy-like flavours, and thus completes the remaining conditions to make this cocktail a French Onion riff.

P.S Morbier mini baguette makes an appearance as what is French Onion without cheese and bread?
