The imposing bust of Grecian goddess Athena, a creation by sculptor Vasilis Sakis placed above the Central Bar, is in direct contact the goddesses' temple, the Parthenon.

Nikos Thomas (chef patron of Simul restaurant for 4 years), known for his work representing the bistronomy scene in Greece, takes charge of the kitchen of Privilege, in collaboration with Villa Mercedes' chef Kostas Terzoudis. The menu consists of modern Mediterranean cuisine based on excellent raw materials and techniques.
