Vol. 3 - 'Chef’s Favourites'

This week’s Test Kitchen Tuesday at Petty Fours Restaurant was all about the dishes Chef Alfred Petty loves the most, and what a menu it turned out to be.

The room was filled with plenty of ooos and arrrs as each course arrived.

We began with crispy hash brown canapés, topped with smooth cream cheese and a touch of caviar, the perfect little indulgent bite to start the evening.

Next came a beautifully herby cheddar scone served with Marmite butter… and somehow it managed to convert even a few Marmite sceptics into fans.

But the real showstopper of the night was the Beef Wellington, served with a rich Cabernet Sauvignon sauce that had people practically licking the plate clean. It quickly became the talk of the dining room.

To share, there was a stunning whole Cornish megrim sole, lightly smoked and served with buttery potatoes and a classic brown butter and caper sauce, simple, elegant and full of flavour.

Dessert - Neapolitan Flake 99, finishing the evening on a comforting and memorable note with some white chocolate caramel shells.

Another fantastic Tuesday evening and a wonderful way for Chef Alfred to showcase his culinary creativity. Tuesdays at Petty Fours are becoming something rather special.

Vol. 2, “Chicken & Truffle”

Last night we moved onto Volume 2 of our Test Kitchen Tuesdays with Chef Alfred Petty, owner and Head Chef at Petty Fours Restaurant.

Each course brought a surprise, clever twists, bold combinations, and plates that sparked conversation around the table. From the first bite to the final petit fours, the menu was thoughtful, creative and beautifully balanced.

I’ll admit, I’ve never been a huge fan of truffle (or wasabi for that matter), but these dishes completely changed my mind.

Another evening full of surprises, great conversation and shared tables, exactly what these nights are all about.

Vol.1, “All about the Creedy Carver Duck".

Last night marked the launch of our very first
Test Kitchen Tuesdays with Chef Alfred Petty, owner and Head Chef at Petty Fours Restaurant.

To set the tone for an evening full of surprises, every dish had its own clever duck twist.
From the first bite to the last, it was thoughtful, creative and genuinely delicious.

A truly memorable way to begin the series, and if this first volume is anything to go by, the weeks ahead promise to be something rather special.

Nearly exactly a year to our opening day when we're listed by Michelin, as a solo chef and a couple of front house members we really were never expecting this. We have been blessed with great customers and personally I have had the privilege of knowing and working with some amazing people!
has been huge in our journey seeing .restaurant.falmouth thrive was a push and a bench mark and the small chats here and there were invaluable it was perfect that they broke the news to us.
making sure l kept standards high. .ricky being on your own in a kitchen was made not so bad for the endless conversations about restaurants and [email protected] who l will always call for
business advice haha showing me the levels that chefs need to push for and how a restaurant at that level works for taking on an impossible task ans smashing it and most importantly the customers and silent angels who have helped and supported along the way. Looking forward to what we do next

Here’s a little throwback to two standout starter dishes from our previous set menu:

Heritage Tomato & Burrata Salad, Olive Tapenade - Sweet, sun-ripened heritage tomatoes paired with creamy burrata, finished with a punchy olive tapenade. A refreshing, Mediterranean-inspired starter that lets the produce shine.

Crispy Pig Cheeks, Fennel & Chilli Salad - Melt-in-your-mouth pig cheeks, crisped to perfection, balanced with the aniseed crunch of fresh fennel and a gentle chilli kick.

Alfred loves crafting dishes that surprise and delight, and he can’t wait to share what’s next on the menu.
