A suped-up clarified New York Sour with a lot of cool stuff going on. Named after one of the most iconic Christmas locations in New York City, the Rockefeller Centre 🎄⛸️
50.5% abv bourbon, accented with nutty and oxidative amontillado sherry, mixed with burnt demerara, fresh lemon juice, and yuzu.
This is all then mixed with thick double cream (yeah, you read that right), which we infuse for an hour at 50°C in our Sous Vide before freezing the mixture. After some time, the cream solidifies, trapping all of the solid particles from the juices, which is then filtered into this crystal clear drink.
The infusion of the cream (before clarification) imparts body, depth, and richness, without tasting like milk at all!
The clarified cocktail is served directly from the freezer, over a large ice cube, and floated with a wonderful, light-bodied, chilled Shiraz wine.
The burnt demerara is made by cooking demerara sugar with a cherry rum in a frying pan. The Rum lowers the boiling point of the demerara, which allows it to gently overcook in a controlled way.
