This week we're heading to the heart of Oaxaca with a beautifully crafted Los Javis Tobalá, an artisanal mezcal that showcases one of Mexico's most prized agave varieties.

Produced by the family-run Los Javis distillery in Santiago Matatlán, this limited release is crafted from 100% Tobalá agave using traditional methods that have been passed down through generations. The agave is slow-roasted in underground ovens, crushed by a horse-drawn tahona, naturally fermented in open-air wooden vats, and double distilled in copper pot stills before being bottled at 46.97% ABV.

Distilled by Maestro Mezcalero Don Javier Mateo, this is a mezcal that proudly celebrates craftsmanship and authenticity. With only 120 bottles produced, it's a rare expression that captures the distinctive character of Tobalá agave.

The nose and palate unfold with buttery vanilla, earthy agave and warming spice, followed by layers of banana, cinnamon, cardamom and a gentle, lingering smoke. Rich, elegant and wonderfully complex, this is mezcal at its finest.

SPIRIT OF THE WEEK

This week we're pouring a true icon of British naval history - Pusser's Gunpowder Proof Rum.

Bottled at the original Admiralty strength of 54.5% ABV and crafted to the same blending specifications used by the Royal Navy until the daily rum ration came to an end in 1970.

Named after the Royal Navy's Purser who was responsible for issuing each sailor's daily tot of rum, this is a spirit steeped in tradition. Its famous "Gunpowder Proof" name comes from the centuries-old test used to prove the rum hadn't been watered down: if gunpowder soaked in the spirit still ignited, the rum was deemed to be "at proof."

At the heart of the Admiralty blend is rum distilled in the legendary Port Mourant Double Wooden Pot Still, first commissioned in 1732. Although relocated and meticulously refurbished over the centuries, this remarkable wooden still remains the cornerstone of traditional Navy rum.

Renowned for producing exceptionally rich, aromatic and full-bodied spirit, it lends Pusser's its unmistakable depth, complexity and character qualities that have defined Navy rum for generations.

SPIRIT OF THE WEEK

This week we're heading to the mountains of Guerrero with a beautifully expressive artisanal mezcal from Mezcales de Leyendas, Maguey Ancho.

Crafted by fourth-generation mezcalero Oscar Obregón, this limited-production mezcal is made exclusively from 100% Cupreata (Maguey Ancho) agave and bottled at 46.9% ABV. Produced using time-honoured methods, the agave is slow-roasted in underground pits, mechanically milled, naturally fermented in oak vats, and double distilled in traditional copper alembics, preserving the distinctive character of both the agave and its terroir.

With only 120 bottles produced, this is a rare opportunity to experience one of Guerrero's finest artisanal mezcals.

SPIRIT OF THE WEEK

This week we're pouring Strucchi Bitter Rosso, a beautifully crafted Italian bitter liqueur that celebrates the golden age of aperitivo culture and classic cocktail craftsmanship.

Strucchi Bitter Rosso takes its inspiration from the recipes and traditions of early 20th-century Italian mixology. Named in honour of Arnaldo Strucchi, author of the influential 1907 manual
Il Vermouth di Torino, it is a modern expression of a timeless Italian classic.

Made with nine carefully selected botanicals, including juniper, gentian, rhubarb root and cinchona bark, the production begins with a slow infusion of herbs, roots and citrus peel before an extended maceration gently extracts every layer of flavour. After careful filtration and tasting, the result is a beautifully balanced bitter with remarkable depth and elegance.

On the palate, vibrant notes of rhubarb and citrus give way to earthy gentian and cinchona, before a long, lingering finish of aloe and germander. Rich, complex and wonderfully bittersweet, it's equally at home enjoyed in a Negroni, an Americano, a Spritz, or simply over ice.

A refined alternative to the familiar, and a wonderful reminder of why Italy continues to define aperitivo culture.

SPIRIT OF THE WEEK

This week we're pouring a beautifully crafted Ukrainian vodka that proves just how refined this spirit can be, Staritsky & Levitsky Reserve Vodka.

Produced in the historic city of Lviv, Staritsky & Levitsky Reserve is made from carefully selected grains grown in Ukraine's fertile black soil and blended with pure spring water sourced from the Carpathian Mountains. The recipe draws inspiration from traditions dating back more than a century, combining heritage with meticulous modern craftsmanship.

Each batch begins with a unique selection of grain spirits chosen by the distillery's Master Distiller before undergoing five distillations and four stages of purification. After blending, the vodka is rested for 30 days in stainless steel tanks, allowing the spirit to settle and develop its remarkably smooth, full-bodied character.

Exceptionally clean yet wonderfully expressive, it offers a silky mouthfeel with delicate grain sweetness, subtle minerality and an elegant, lingering finish. This is vodka stripped back to its essentials pure, precise and effortlessly refined.

We’re switching it up this week from our usual classics specials to give the team a bit of a challenge. We wanted to put a focus on Mezcal - so we told our very talented bartenders to each create something exciting and original. Easier said than done!

Finley decided to do a spin on a classic. The drink is aptly named ‘Cash in Hand’, wanting to pay homage to Mezcal’s historic Mexican roots. Think bootlegging, smoky cantinas, desert trails and under the table deals, the name really helps encompass this theme. The flavours put an onus on sweet rich banana liqueur harmoniously balanced with the savoury, nutty flavour of sherry and the smokiness of Mezcal.

A modern take on a classic concept, ‘Deferred Gratification’ is Louis’ brainchild and has been perfecting his drink for the past couple of weeks. The name stems from the history of the base spirit. The agave itself can be considered one the ultimate lessons in patience, with many mezcal agaves, such as Arroqueño or Tobalá, taking anywhere from 8-25 years to mature before harvest. expect a rich silky texture, refreshing fizz and lots of tart flavours coming from lemon and passionfruit to balance out the smokiness of the Mezcal.

SPIRIT OF THE WEEK

This week we're pouring something truly distinctive, Amarás Logia.
A beautifully expressive mezcal that captures the wild character of Durango and the remarkable complexity of mature Cenizo agave.

Crafted from 14-year-old wild Cenizo (Agave durangensis), Amarás Logia is traditionally produced using volcanic stone ovens fuelled by huizache and mesquite wood. After roasting, the agave is hand-milled, naturally fermented, and double distilled before being bottled at 43% ABV, resulting in a mezcal that balances tradition with exceptional purity.

Amarás is committed to preserving both mezcal and the landscapes it comes from, planting multiple agave for every one harvested and supporting independent mezcaleros across Mexico. It's a philosophy rooted in sustainability, respect for terroir, and authentic craftsmanship.

The palate opens with vibrant citrus and dried fruit, unfolding into rich espresso, subtle wood spice, and earthy smoke. The finish is long, refined, and beautifully balanced.
