SPIRIT OF THE WEEK

This week we’re diving into something bold, spicy, and packed with old-school character : Pikesville Straight Rye Whiskey.

Originally produced in Maryland before finding a new home in Kentucky, Pikesville has become one of the benchmark rye whiskeys in America. Bottled at a punchy 110 proof/ 55% ABV and and drawn from specially selected barrels aged for 6 years, this is rye whiskey with serious depth, but also remarkable balance and drinkability.

The extended maturation develops layers of spice, sweetness, and oak, while the higher proof ensures the whiskey stands up beautifully.

The palate is where this whiskey really comes alive. On the nose, it opens beautifully fragrant and inviting fresh mint, clove spice and caramel upfront, followed by layers of vanilla custard, crème caramel and a subtle fruity sweetness that keeps evolving in the glass.

Complex, powerful, and endlessly sippable, this is a rye whiskey that absolutely lives up to the hype.

On by the glass… while it lasts!

SPIRIT OF THE WEEK

This week we’re pouring something rich, elegant, and full of Caribbean character, Doorly’s XO Rum from the legendary Foursquare Distillery in Barbados.

Produced at one of the island’s most respected distilleries, where rum-making has been part of the landscape since the 1920s, Doorly’s XO is a beautiful example of traditional Barbadian rum done properly.
In the glass, it pours a warm golden amber with an invitingly fragrant nose of honey, ripe mango and soft vanilla.

The palate is smooth, layered and wonderfully rounded rich toffee, baked banana and sweet raisin notes lead the way, followed by hints of mocha, liquorice and gentle warming spice from the oak. The short finishing period in Oloroso sherry casks brings a subtle dried fruit character and a silky richness that lingers beautifully.

Complex enough to sip slowly over ice, yet versatile enough to shine in a cocktail, this is one of those rums that quietly wins people over from the very first glass.

On by the glass… until it’s not!

This week we’re thrilled to be showcasing some really cool bottles: The Roggenwolf, The Bootzamon and The Storyteller. The Story Of Bourbon is a small American whiskey brand, based out of Ilford in London, that puts an onus on quality rather than scale at an affordable price. These bottles are ALL limited edition, with only 828 being produced between them.
Coming from a very passionate and tight knit team with a combined 50 years of experience in the drinks industry, the team concluded that smaller batches of really special, high quality Whiskey outweighed mass produced consistency.
Their identity seems to be that every barrel of whiskey has its own unique flavours, aromas and stories which should be celebrated instead of being discouraged. They blend their Bourbons and Ryes in what most producers would consider to be ‘micro-batches’ using usually no more than 7 barrels at a time, and have a flavour profile that they try and target for each batch but allowing each to have its own special flavours and expressions.
We will be running a tasting flight of all three of these bottles for £25 until they’re empty!

SPIRIT OF THE WEEK

We’ve managed to get our hands on something seriously special this week, Templeton Rye 10 Year Single Barrel.

Aged for a full decade in heavily charred new American oak and bottled at a robust 52% ABV, this is a bold, ultra-limited rye that doesn’t come around often. Not your everyday shelf bottle, but one that rewards those who know what they’re looking for.

In the glass, it shows a deep, burnished amber with warm, toasted orange hues. The nose is rich and inviting, chocolate shavings and vanilla cream up front, followed by buttery toasted oak, with lifts of green apple and soft apricot bringing balance and brightness.

The palate leans into its age beautifully. Dark, charry oak leads, wrapped in silky honeyed florals, while that signature rye spice builds steadily in the background without ever overpowering. It’s structured, confident, and incredibly smooth for its strength.

The finish is long, clean, and indulgent lingering notes of caramel and butterscotch with a creamy sweetness that slowly fades, leaving a warm, satisfying impression.

Deep, complex, and quietly luxurious, a rye for slow sipping and proper appreciation.

On by the glass… while it lasts!

SPIRIT OF THE WEEK

We’re heading to the coast this week with something bright, refined, and effortlessly drinkable – Salcombe ‘Start Point’ Gin.

Born on the water’s edge in Salcombe, Devon, this award-winning London Dry is a true coastal spirit, inspired by the old fruit schooners that once carried exotic citrus and spices back to England’s shores. It’s a gin with a sense of place and a story in every sip.

Exceptionally smooth and beautifully balanced, the nose opens with fresh red grapefruit and classic juniper, lifted by a crisp citrus edge. On the palate, it’s vibrant and layered – zesty lemon and lime peel, soft spice from cardamom and cinnamon, and a gentle sweetness from liquorice and chamomile, all working in harmony.

Distilled with 13 carefully selected botanicals, including Macedonian juniper and cubeb berries, it delivers a clean, complex profile that’s both refreshing and elegant.

Best served simply with plenty of ice, a slice of red grapefruit and a good tonic, perfect to way to enjoy the spring!

Crisp, coastal, and dangerously easy to drink – this one won’t hang around.

On by the glass… until it’s not!
