WARNING: This pumpkin pie is deliciously infused with the bold flavour of Sailor Jerry Spiced. Please consume responsibly.
1 9” pie crust, pre-baked until golden
2/3 cup Sailor Jerry Spiced Rum, reduced over medium heat to ¼ cup
1 15oz can pumpkin puree
¼ cup sugar
½ cup brown sugar, packed
½ tsp vanilla
3 egg yolks
1 cup whipping cream
½ tsp nutmeg
1 tsp ground ginger
1 ½ tsp cinnamon
¼ tsp cardamom
Pre-heat oven to 350 degrees.
In a large bowl mix together Sailor Jerry, pumpkin, sugars and vanilla. Slowly add in the egg yolks one at a time, mixing well between each. Incorporate the rest of the ingredients.
Pour into prepared pie shell, place on baking sheet, and cover crust with foil. Bake for 45 minutes, remove the foil and bake another 15. Cool completely and serve!
